I have a shed load of stewed rhubarb, can I magic it into a cake somehow?

Could you do a plain/Ginger sponge as a base, strain the rhubarb so it's as dry as possible, then sprinkle crumble topping on the top? (bake the whole lot as a whole). I'm sort of thinking of a german Streusel?

rhubarb ice-cream is farking amazing - Delia's website has a rhubarb crumble icecream, ignore the crumble bit and it's still good.

Slubbers I made this one on Saturday, yum but doesn't use much rhubarb at all*

I can recc making rhubarb and custard vodka - 1 kilo rhubarb, cubed, 300g caster sugar, 1 litre of vodka, 1 vanilla pod, stick all in a large kilner, store somewhere dark and cool ie shed/garage, shake occasionally, strain out after 3 months, longer is fine. Yum

*NB Crocky, tiramisu, perfume advert with Nicole Kidman, if you get me drift

I made this rhubarb and custard cake a couple of weeks ago. I cooked it in 2 loaf tins though as the recipe said it might not cook through well. It cooked through well in 2 loaf tins. I would double the rhubarb involved myself though.

right then. epic rhubarby cake efforts over next few weeks. and that icecream.

rhubarb vodka might be a no as am still ploughing my way through the lemon sherbert dishwasher vodka which makes me all lusty and dh a bit frightened. I expect rhubarb might have similar effetc.

this is DIVINE I used 1lb of rhubarb, stewed with a little brown sugar instead of jam, served 9 peeps. Well, 7 adults, and I had seconds, twice Blush

tis Queen of Puddings but with rhubarb and not jam. I do a poncey mini version in ramekins and my guests are seldom not delighted. Now it has a name. Monmouth pudding. excellent
