I have a shed load of stewed rhubarb, can I magic it into a cake somehow?

BBC Rhubarb and Custard cake is yummy.... especially with more custard poured over. I also added a tablespoon of custard powder to the cake mixture.

this rhubarb and ginger jam sound lovely as well

I made rhubarb and ginger crumble the other day.

I stewed some rhubarb with a spoon of sugar and lots of ground ginger, then covered it in crumble topping (3oz butter, 6 oz flour rubbed together to make a crumby mix then 3oz of sugar stirred in - pour it on top and pack it down a bit) It vanished very quickly so I think the dcs liked it Grin

I made a Rhubarb & raspberry bread & butter pudding when I had loads of rhubarb, egg yolk & some stale bread to use up recently - I'm not a fan of either rhubarb or B&B pud, but thought DH would enjoy it as he loves both - it was surprisingly lovely & we all ate it :)

The BBC R&C cake is improving with age.

rhubarb bread and butter pudding sounds fab rockinhippy. May do it this w/e for Sunday lunch.

That jam looks lovely carrots.
