What's for dinner tonight?

Today I am making a chicken soup from the carcass and leftovers from the jerk roast chicken I made yesterday and added Pearl Barley, that soup mix stuff that has lentils, peas oats and such, some pearl barley and asparagus with a can of sweetcorn. I added some chilli flakes and jerk seasoning to give it more kick.

Pumpkin ravioli with sweetcorn and salad.

Tonight will be grilled spicy beefsteaks with roasted mushrooms, asparagus and baby corn :)

Last night was chicken pieces cooked with spinach in a piri piri marinade, with sliced peppers, lettuce and cucumber.

Last night- Tuna and red pepper lasagne, followed by blueberry cake.

Tonight- chicken and leek casserole roast potatoes, followed by more blueberry cake. (if I don't eat it before then)

Last night - eggs. Tonight - pasta.

3. Where is the sunshine?? I want to feel summery eating salad and salmon and stuff FFS.

As usual every one is having something different because I am working and they're all fussy sods so getting one pot meals they all like is impossible.

Last night:

Dd1 and dd2 had sausage and kidney bean casserole from the slow cooker.

DH had chicken foo yung and egg fried rice

I had spinach and feta omlette.

Tonight:

Children: God knows, they're eating at their grans so it'll be mac n cheese or sausage, egg and chips.

DH: Chinese again (I get free meals from work, he assists my diet by eating them for me )

Me: Baked sweet potato with cottage cheese with pineapple chunks and a watercress and rocket salad, with some sort of dressing (whatever happens to be on offer at the shop)

Sweet potato gnocchi with tomato sauce.

Tuna crunch with wholewheat pasta followed by strawberry jelly.

Asda fresh pizza and salad out of a bag.

Greek lamb pasta bake from good housekeeping recipe here today

ham salad consisting of iceberg, toms, cucumber, cheese cubes , sliced hardboiled egg, spring onions, fresh pineapple and ham.
with oven chips and loads of salad cream.

Tonight dcs had chicken fajitas and I had prawn fajitas (without the tortilla) - we were using up odds and sods, hence the different dinners - dh ate out!

We had Sainsburys ttd cod and parsley sauce fishcakes with steamed broccoli and sweetcorn. Fresh pineapple and raspberry yogurt for pud.

We had pasta with broccoli + mushrooms for OH and me-DCs don't eat those horrid things if they can see them- they put cheddar on theirs and I had blue cheese.

I am liking this thread, gives me inspiration :)

Tonight will be gammon steak with roasted courgette, mushrooms, aubergine and some wilted spinach. I am low-carbing so roasted veg is g a staple. DC and DH will ahve the same but with some roasted new potatoes too.
