You know what makes a really nice soup?

Carrot and cauliflower.

Just lightly boil them in a pan with a bit of seasoning and blitz when done. Tastes all buttery and comforting but it's really low calorie. Sometimes I start by sweating a chopped onion. Sometimes I chuck a spoon of bouillon powder in. Serve with black pepper or a splodge of creme Fraiche if you fancy. Or just eat as it comes.

Surprisingly good.

Thank you Aubergine.The carrot and cauli soup was so good that I've made large batch of it for MIL and other elderly family members who don't ' do ' veggies.

I posted the other night about my 'discovery'. Home made soup with Yorkshire puddings for dunking instead of bread.

I am a convert. I also made some garlic and rosemary ones which were even better to dunk!

Just to add, I like to use St Agur blue cheese (have at Sainsbo) as it's really creamy, and I sometimes add garlic to the soup as well.

I just got some French recipe books with lovely soup recipes from the Alps, will post some if the thread is still going when I try them out!

Mmm...dreaming - I must try the St Agur version.

It's a great recipe for after Christmas when the fridge is bursting with the remnants of the festive cheeseboard - just shove it all in!
