You know what makes a really nice soup?

Carrot and cauliflower.

Just lightly boil them in a pan with a bit of seasoning and blitz when done. Tastes all buttery and comforting but it's really low calorie. Sometimes I start by sweating a chopped onion. Sometimes I chuck a spoon of bouillon powder in. Serve with black pepper or a splodge of creme Fraiche if you fancy. Or just eat as it comes.

Surprisingly good.

honestly - always made with coconut milk instead of milk, so filling and great when bf - also vvvv easy!

Courgette soup from courgette glut in summer, served chilled.

Sweat potato and onion in butter, add sliced courgettes and chicken stock, simmer for a while, blitz in blender then add cream and chill.

Another thing I have done because Mumsnet told me to - yesterday evening I made carrot and cauliflower soup, out of manky old veg lurking in the salad drawer - not expecting much, really, but it was GREAT. I Magimixed it, and it was smooth, creamy, buttery and delicious. I'm converted, allhailtheaubergine.

My favourite soups are concocted from whatever is hanging around my kitchen, I couldn't give a recipe if I tried!

And yes crackerfactory that Marigold boullion stuff is fine. I use it often in soup because I always have some in the cupboard.

Ladies, good luck with the lovely lentil soup - so good with naan Grin and filling too!

can I suggest something to all of you? grating the carrots first makes the soup far "fresher" tasting and quicker to make - also you don't need to peel them!

runner bean soup (sweat about 600g of destringed beans and a large leek with butter til leeks are softened, then add about 800ml of veg stock (I used a cupe) simmer for 25 mins and blend.

Spinach soup - saute a diced onion and a potato. Few big handfuls of frozen chopped spinach, pint and a half or so stock, big slug of milk (makes it nice and creamy), simmer for 20min, season well and then blitz well. Laarverly and full o' green goodness.

Useful tip I came across the other day is to use a slice or two of bread to thicken soup (great if you haven't got any potatoes are too lazy to peel a potato) just rip it into smallish bits and add near the end. You can't taste it at all once it's whizzed but it just thickens it up nicely. Also makes the soup more filling.

I do a lush Cauliflower and Stilton soup - you can use cheddar instead if you are not a blue cheese fan. Really comforting.

Chop an onion, sweat in butter, add broken-up head of cauli and a diced potato, and simmer in veg stock until soft. Whizz with a blender, then add lashings of crumbled cheese, some creme fraiche and salt & black pepper. Mmmmmmm.....

Figgy - that is going straight into my repertoire. And bonus points for the coconut milk substitution as son is dairy allergic. Brilliant.

BodyUnknown - hooray! I'm so glad you liked it. And yes!! It tastes buttery and delicious when really it has no right to.

Berri - quantities... ehhhhh, probably about the same amount of carrot and cauli? One small - medium cauli and six med - large carrots? It really doesn;t matter much. And yes, leave some water in to make it soupy. Just pureed veg would be a bit more like baby food. Consistency is down to your personal taste.

Am going to try a couple of others from this thread too. Mmmm @ spinach soup.

I made an enormous vat of carrot & cauliflower today. It was okay but nothing special, I'm afraid - a touch bitter. I think I'd want quite a lot more carrots than cauliflower to make it sweeter. (Sorry, OP. :))

Just bumping to say DH made the spicy carrot and lentil soup (with coconut milk) and it was indeed delicious Smile. Will definitely be making it again.
