What to do with feta cheese?

I have never used it before. I bought some for a recipe but now I have lots left.

Any good uses?

Otherwise I'd use it in a greek salad or a roasted veg with couscous type concoction.

Greek salad minus the tomatoes

Make my feta dip - mash it up and loosen it with a bit of natural yoghurt and a splash of olive oil; lots of black pepper and some chopped green chilli and red onion; lemon juice if wished. Eat with toasted pitta.

Lightly toast pitta bread then spread mashed feta and red onion on it and toast until browning.

Make a nice tomato-based sauce (i.e. with onions/leeks/mushrooms and a tin of toms). Cut the feta into large chunks and wrap each one in a boneless chicken thigh. Poke the chicken thighs into the sauce and simmer on the hob for 20 minutes or so until cooked.

Lovely with rice.

I regularly make spionach and feta filo pie. My recipe is fairly similar to Jamie O's one in his latest 30 minute cook if you want to look it up.

I think feta is really good in a frittata with spring onions, potatoes, red chilli and fresh mint. Yum.
