I want to make a soup that isn't orange!

I am making the following soups on rotation and would really like a change- not so much from the taste but from the appearance of them!

Carrot and coriander- orange
butternut squash and sweet potato- orange
lentil and bacon- yellow-orange
tomato and roasted peppers- reddy orange!

I would really like to make a green soup. i know i could just grab a load of green veg and stick it in but Im not sure what that would taste like! Does anyone have any tried and tested recipes? I'm not overly keen on peas- don't mind them as an ingredient but not as the star of the show IYSWIM.

Any ideas for non- orange soups appreciated.

bigchris · 10/11/2010 12:53

nickelbangBANGbang · 10/11/2010 12:54

potato and savoy cabbage with bacon

green-ish with meat.

DamselInDisgrace · 10/11/2010 12:54

Minestrone should be red. As should tomato soup.

Cauliflower soup will be white, more so if you make it with milk.

Irish Vegetable Soup (my own recipe but I'm Irish so it's totally authentic Grin)

1 onion
2 x celery
1 x leek
2 x carrots
1/2 a savoy cabbage
2 potatoes
1 cup pearl barley
2 ltrs veg or chicken stock

Sautee off all the veg for 15-20 mins. Add pearl barley. Add stock. Allow to simmer for about 40 mins. The barley will plump up and the veg will be all soft and yummy. Add lots of black pepper. Do not blend.

Best served with homemade wheaten still warm out of the oven. .

Yellow split pea.

Pea and ham.

GrimmaTheNome · 10/11/2010 12:55

leek and potato.

sure there's something you can do with spinach

Borscht - not green but it sure ain't orange!

Pea can be nice so long as its properly hammy.

I have just made cauliflower and broccoli soup for my lunch.

Chop and fry an onion in butter, add chopped up:

1X cauliflower, 2X broccoli heads.

Add stock or water plus seasoning. Simmer till cooked , but not over cooked.

Cool and blend.

Add some milk, plus or minus cream and season.

Delicious with a bit of stilton crumbled in.

DamselInDisgrace · 10/11/2010 12:58

Parsnip.

You can make the duggar's vile broccoli soup. It's pureed broccoli mixed with nasty processed cheese and thickened with cornflour and water. It's almost certainly not goo, but it shouldn't be orange (unless the cheese completely negates the broccoli).

starfishmummy · 10/11/2010 12:59

Spinach. Watercress even lettuce. Start by brwning onion garlic if you like it and a potato or two for body. Add water/stock and any thick bit like the watercress stems. Simmer till done then add the leafy bits for 5 mins or so. Blend and check seasoning. Don't put the leaves in early or it goes sludge coloured.

Thai style spinach soup - heat some coconut milk and stir in green curry paste until fragrant; add rest of the can of coconut milk + fresh or frozen spinach... bring to boil and whizz it up

CerealOffender · 10/11/2010 13:07

borscht is a great colour

GrimmaTheNome · 10/11/2010 13:12

Sweetcorn chowder for a nice yellow.

DamselInDisgrace · 10/11/2010 13:32

Sweetcorn chowder is great.

Most other types of chowder should be white.

Cullen skink?

You are all fantastic- I cant believe you thought of so many different varities. Thank you. Printing the thread now and will be turning the house into a soup kitchen tonight! Might give the processed cheese one a miss though...
