urgent - i need to make a cake/sweet for the work cake club!

I can't do

Lemon drizzle cake
Millionaire shortbread
muffins
Zuccini cake

As these have all been done perfectly so I cannot attempt to top them. I need a niche, something simple, yet amazing.

It needs to be something flour related, even if only loosely. You know, cake/biscuit type affair.

Suggestions and recipe links please ladies!

i RECENTLY MADE this for my work cake club and it went down VERY well.

Personally I buy a sweet shortcrust pastry case from Tesco and just do the filling. If you do that though you only need 2/3 of all the filling ingrediants.

Nigella brownies - the chocolate ones with the cream cheese in the middle. They are amazing. Not sure which book they're in but I have the recipe somewhere.

Good old fashioned victoria sponge but filled with jam, fresh fruit and whipped cream?

Depends how into baking you are but the most impressive things I can think of would be chocolate eclairs/profiteroles or those fruit tart things filled with creme patisserie and topped with strawberries.

Or just do a huge plate of chocolate-dipped strawberries - looks amazing, people think you are a Goddess but it is stupidly easy.

I have found this recipe which I fancy making, but not yet done. The reviews are good and it has 5 stars. (AND it's no bake!! And it's chocolate!!) Wink

oh now scones, clotted cream and jam would be good, but that is an afternoon thing, and I only work mornings. I do like the idea of Tiffin...

Morning is more pastries isn't it? is it hard to make danish pastries?

pinkjenny* oh yes, its great. There are about 12 of us, and it is every thursday, so we get to make something once every 12 weeks, not too laborious. And there is a even a spreadsheet so you can put down what you want to make, so there is not millions of the same thing (ie lemon drizzle!) Grin.

but not whipped cream though. nononononono, has to be clotted cream, which is easy enough as I live in Devon Grin.

I could do perhaps some sweet ones for jam/clotted cream and some cheese ones for butter?

got a very quick and easy brownie recipe. makes lovely fudgy brownies without having to melt chocolate etc.

Oh you have it made, lol. It would be rude not to given your local circumstances. Great idea, I love a cheese scone too. The scone is hard to beat. I also love a granary scone........

This is a great Danish pastry type thing- ready roll puff pastry, score 1cm fro edge, thin layer marzipan, sliced apples or plums or peaches on top bake about 25 min apricot jam and lemon juice on top if you like and cut into squares, yum warm with cream or just room temperatur.

Nigellas processer danish are easy but time consuming. You have to make the dough and leave it at least overnight (up to 4 days) then do the cutting and filling, egg glaze, cook, cool and sugar glaze. They are very nice. Do you want recipe?

Sticky gingerbread, here went down well with work this week.
Instead of the rum, I substituted a handful of mixed dried fruit soaked in cinnamon and mango tea, then added the fruit and equivalent vol of the tea instead of rum.

I promise you you will not regret it, it is now a staple in my household for birthdays etc, can be made into cupcakes/fairycakes too and as a pudding. will seriously impress and it lasts too!
