Eating disorder and lack of confidence in 18 year old

My niece has had a tough time growing up and over the past year has become withdrawn and developed an eating disorder.
She is bright and due to start uni in September but may not make it this year.
She is seeking professional help but I'm also desperate to help boost her confidence.
Does any one have any ideas either of ways I can help, or ideas for a possible gap year which will boost her self esteem taking into account she is quite socially anxious at the moment?

You sound lovely! Does she have any particular skills or talents - things that people congratulate her for and encourage her in - that she could offer to others through voluntary work or teaching?
