Vegetarian Christmas dinner?

I'd be really grateful if the vegetarians here could tell me what they're cooking and eating on Christmas day or Boxing Day please, with links to recipes if at all possible.

We're normally a meat-eating family but my son has become vegetarian at university and I'd like to do meat-free meals while he's home, especially on Christmas Day and Boxing Day.

Dd 2 has been vegetarian for 10 years now. We have often made this nutloaf its delicious

@IamEarthymama @DrPrunesqualer this sounds so nice and very easy to do. Where do you buy chestnut purée from? I’ve never seen it I don’t think!

I am tempted to make it but there’s only me, DH and DD for dinner and they are both having beef so it seems a faff just for me.

You used to be able to buy chestnut purée in a tin in Tescos Asda Waitrose etc but I haven’t seen them for ages

So now I just blend chestnuts
They're in most shops
Like these below

ps. It’s a great mix for sausage rolls aswell and freezes really well

Its a BBC good food recipe. Cant see how that is behind a pay wall. If you google nut roast recipes its usually in the top 2 recipes.

It all reduces down into no liquid and you’re just lovely caramelised garlic at the end 😃

@DrPrunesqualer fantastic thank you. It sounds stupid but it never even occurred to me to just blend the pouch of chestnuts!! I have a couple of pouches in already. So I might make the effort and give it a go and we can have the rest as leftovers.

I can't guarantee that they won't cause indigestion but I occasionally get the M&S chilled roast potatoes and they are good. TBH, not as good as my home-made roast potatoes, but very nice indeed.

My roasties are always perfect.
I usually prep all the veg the day before, and DP finishes everything while his meat is cooking.
But he gets his knickers in a twist about timings when he's not cooking everything and I'm fed up of the stress.
His roasties are rubbish 😆, it's taken me years to train him into peeling the spuds first.

Oh dear oh dear oh dear! They really do have to be peeled. If you want skin on, you go for baked potatoes or wedges.

I'm doing a Quorn roast with all the usual Christmas veg. I'm not a huge fan of meat replacements but I have to have "turkey", stuffing and cranberry sauce sandwiches Christmas night! Preferably with a Bond film...🤣

Drizzle with oil
Don’t put foil over in the oven

@DrPrunesqualer I’ve not seen it or any RC films, therefore the Waitrose ad really confused me 🤔 so someone explained what KK meant by the cue cards remark and I watched the clip on YT which has convinced me even more that I don’t want to see it. It’s so weird

Or….hasselback? Agree 100% skins are not part of a roast potato regime.🥔

talking of skins somebody mentioned on a ‘what to buy at Aldi’ thread about their skin on fries, I got some Friday and can confirm they are good. My decent oven chip quest is finally over. 🍟

I’m off to Aldi tomorrow but will have to resist the skin on fries. The only way I can accommodate them is to buy another fridge. (I’m this close…)
