How much gravy...?

per person? Am planning to make Jamie Oliver's make-ahead gravy (has anyone tried this before?) and wondering how much to make. I have 11 people here - mix of teens with big appetites and elderly people with tiny appetites. The standard recipe is 1 litre. Is that about right? Wouldn't really want people to not get enough gravy!

People clearly have very different preferences for gravies! I hate rich, unctuous gravy. I just want a light jus.

Jus has its place but I prefer and serve gravy with Christmas dinner, two different options.

Triple what you think you need….nothing worse than running out of gravy…..don’t forget you’ll need some leftover to dip cold roast potatoes into in the evening too!

I did 4 batches of his gravy for 16 people last year so I’d say 3 batches would be enough for you. Adding the meat juices definitely transforms it.
Do not use the star anise. My first batch went down the drain when I used the star anise as it was just wrong and definitely wasn’t something I’d want over my dinner.

For me it's dependant on the meat, I'm not a "pour it all over everything" person, I just have it on the meat but I do like a rich gravy with beef and lamb.
chicken and pork something lighter.

Isn’t turkey more like chicken/pork? And presumably that’s what we’re talking about here? Though personally, whatever the meat, I definitely don’t want the gravy/jus to be thick. It can be intense, but not unctuous.

1l does us for Sunday lunch - 2 adults and 2 kids.

I have done the make ahead gravy but it wasn't as good as made on the day gravy and it was a bit faffy. I do mine on the day when the turkey is resting.

Me too. With stock made from the giblets, onion, etc. the day before.

The Jamie O gravy sounds a needless faff to me.

There will be lots of left over chicken meat from the legs/drumsticks. I plan to make his little pastry things with them as recommended (though I'll just buy the puff pastry), but that won't use it all up. Can I freeze the rest to make into a pie later?

That leftover meat can go in the freezer for cold January days.

I know! I just don't understand it. Ok I don't like gravy but even if you do why would you want a meal swimming in it? Surely just a little on food is enough. Why make everything wet and taste of gravy? Just weird

If being weird means liking food that should be crisp staying crisp and not wanting lots of meals to just taste of gravy then I'll take it!
