How much gravy...?

per person? Am planning to make Jamie Oliver's make-ahead gravy (has anyone tried this before?) and wondering how much to make. I have 11 people here - mix of teens with big appetites and elderly people with tiny appetites. The standard recipe is 1 litre. Is that about right? Wouldn't really want people to not get enough gravy!

More gravy! What's the worst that could happen?!

I hate it when there isn't enough gravy and you have to ration it.

I litre only does 4 servings in my opinion!

goingtotown · 14/12/2023 14:38

Double up.

BanjoMango · 14/12/2023 14:42

Just replying because I want to request a christmas dinner gravy update during the Christmas period to see if OP is filling a swimming pool with gravy leftovers or her last few guests are residing in a prison cell christmas day due to fighting for the teaspoon of gravy left between the 4 of them

motherofawhirlwind · 14/12/2023 14:42

3 litres I'd say.

How can your husband and daughter eat half a litre of gravy with their Christmas dinner? How does it even fit on the plate? A tin of soup is 400ml, and I can’t image a roast meal with more than that amount of gravy on it. The meal would essentially be soup.

You keep topping it up as you eat some. Then you have a bit more of this, bit more of that and they all need gravy too 😋

Yes - I will be the guinea pig and report back! I'm planning to double the amount Jamie Oliver says - which should make 2 litres. I'm leaving out the star anise! I'll have back-up bisto just in case.
I am trying to visualise 2 litres on the table, and feeling like that would probably be plenty? If our family of 4 had 1 litre, I'm pretty sure that would feel like... not too much gravy exactly, but a lot more than we'd eat. We've effectively got another family like ours coming (my db, dsil and 2 teenage nephews) plus three older family members.

Yeah, I'd also omit the star anise.

Ah nooooo! Do not omit the star anise!

I'm making my Jamie Okiver gravy this Saturday to freeze! Then on Christmas Day take it out and take off the top layer of fat that always seems to go to the top!

Just to balance out all the pro-gravy people, I usually either make none or get one small pot from M&S for 9 people. I don't think I have ever met anyone who was particularly into more than a small dash of gravy?! And I've done the famous Jamie Oliver gravy so it's not that I've never done it properly!

Can you DM me your name so I never make the mistake of having dinner at your house?

JK, not really. Really.

Pallisers · 14/12/2023 15:51

Two teenage nephews? there can never be enough gravy.

LolaJ87 · 14/12/2023 16:03

I love gravy but have never, ever bothered making my own (despite being an avid fan of cooking and baking from scratch). It sounds like hard work and quite spendy! Can all your gravy fans confirm if it's actually worth the effort or have you gone back to Bisto/M&S? 😁

MsPavlichenko · 14/12/2023 16:09

If you are factoring in teenagers, I’d do even more , maybe x3? You really don’t need to triple the chicken, especially if you use chicken wings and maybe add a couple of good (organic stock cube)to the liquid. Left over gravy can be added to left overs, soups or even sandwiches when it’s cold/very thick. This is the gravy to make ahead.

It is massively better IMO. Bisto is a for a quick n easy midweek meal. Homemade gravy is for a feast.

When I made the JO gravy, it was a little too thick and I had to water it down, so it made a bigger quantity than it said. I agree to skipping the star anise. I made it in my turkey pan, i.e. a really big, fairly deep roasting tin.

PleatedShade · 14/12/2023 16:31

What on earth do you non-gravy makers do with all the delicious savoury goodness in the bottom of the roasting tin?? Please, please don't say you throw it away? <weeps>

Offredismysister · 14/12/2023 16:36

I’m making a roast now & will use the Yorkshire pudding batter for the gravy. I also drain & use all the water from the veg to add to the meat juices & stock. I’ve been doing this since I was taught to cook aged 15.

Frasers · 14/12/2023 16:37

I think people are competing to see how extreme they can be on thr gravy front. Some of this is excessive, a pint of gravy a person just for lunch, 😂

henrysugar12 · 14/12/2023 16:39

badger2005 · 14/12/2023 13:43

How on earth do normal people manage this sort of thing? Without asking mumsnet?

They just use bisto...

LolaJ87 · 14/12/2023 16:39

@PleatedShade I mix it with instant gravy 😅

idontlikealdi · 14/12/2023 16:42

1l does us for Sunday lunch - 2 adults and 2 kids.

I have done the make ahead gravy but it wasn't as good as made on the day gravy and it was a bit faffy. I do mine on the day when the turkey is resting.

Phew! I was going to have gravy related nightmares...Grin

pinkspeakers · 14/12/2023 17:08

That would be loads for us, but we are not big gravy consumers - just a dribble on the meat really, a little on the potatoes. We always have gravy left. Looks like we are not typical though!

kneesdonthurt · 14/12/2023 17:10

Make way too much and then freeze it for a future dinner. 😀

pinkspeakers · 14/12/2023 17:11

The Cook complete Xmas dinner for 12 comes with 3 lots of 400ml gravy
