Vegetarian meals for Xmas

I am having a bit of a meltdown trying to think of vegetarian meals to cook over Xmas that don't contain onions and aren't laboriously complicated to make. I have DD's boyfriend coming who I have never met. She is veggie and he doesn't eat onions! Help! He isn't arriving till the 27th so will have nut roast for Xmas lunch.

If you can, check why they can't eat onion. If it's an IBS related reason they're probably okay with the green part of spring onions.

Lentil loaf made with lentils, lemon juice, cheese, cream and fresh chopped parsley. DH makes it evening of Xmas eve then it slices better cold. He haves it with roasted vegetables carrots and parsnips, Brussel sprouts and peas also 3 tiny boiled potatoes. With hot gravy over the top. He has the lentil loaf sliced on Boxing day too.
