Vegetarian meals for Xmas

I am having a bit of a meltdown trying to think of vegetarian meals to cook over Xmas that don't contain onions and aren't laboriously complicated to make. I have DD's boyfriend coming who I have never met. She is veggie and he doesn't eat onions! Help! He isn't arriving till the 27th so will have nut roast for Xmas lunch.

OnceAgainWithFeeling, absolutely! I made mine in November, it’s in the freezer ready for Christmas Eve. It takes me approx 1 and 1/2 hours of prep but is well worth it.

I have been making of for about 20 years now. It’s as easy to make 4 as 2 as 1 so that’s what I do! 🤤

Veggie cottage pie! You can use only vegetables or add some vegan mince for the base. I make this for meat eaters and no complaints.

I'm going to be doing this for myself, instead of the caramelised onions I'll do some with a cranberry chutney (can get from most supermarkets)

Looks easy enough and hopefully yummy.

This is what I prefer. I eat the veggies and don't need anything extra because there is always so much chocolate, puddings, etc.

except when the veg have been roasted in beef dripping/goose fat/lard or around the roast meat. And the meat juices added to the gravy…

I'm making a veggie lasagne for boxing day...mushrooms and spinach. Adult dd is veggie and we have people round that day.

This is why I hate meat eaters trying to second guess what ‘vegetarians’ might eat like we are an alien species. Half of the Christmas dinner IS vegetarian!!! So you just need a substitute for the meat. And not nut bloody roast - yuck. And not something completely wild and whacky like a curry or a chilli.

Just ask them - “I’m doing the usual Christmas dinner - so loads of roasts, veggies etc and obviously you’ll not be having the turkey or gravy - what do you fancy as a substitute?”

Simple.

I've got 8, unsure what most even eat (the boyfriends) one veggie. I'm cooking the kinds of meals you can put in tgd middle and take what you like eg Mexican one day, curries another and so on - for the non onion eater are they allergic or dislike, makes a huge difference because things like pastes that are a lifesaver cooking for a crowd contain onion

apparently in dh’s family yorkshire puddings “have” to be done in lard, roast pots “need” goose fat to crisp up, and most of the other stuff is roasted in the same tin as the meat.

I always double check. Because they honestly will tell me I can have veggies, just leave the meat, and can’t see the problem.

that and the people who think tuna is vegetarian. I was served salmon at a wedding once as the caterer knew I was veggie.

I love a nut roast! The cheese and onion pasty things that MIL thinks are the height of vegetarian sophistication on the other hand……. 🤢

Mushroom Wellington , can be made in advance and frozen.

I came to suggest this, it's luxurious easy and veggie. You can leave out the stilton if needed.

To those recommending Delia's cheese and parsnip roulade, is this served at room temp or hot? I need a veggie dish that can be served with Christmas dinner sides, and was eying this up but not sure how it would taste room temp (and don't have the oven space to make it on the day and serve hot).

Piping hot.

Make ahead and reheat in the oven or microwave. It’s very robust and doesn’t take up much space.

It’s also lush cold, but maybe not with Xmas lunch.

I’m veggie with a veggie teen who hates onion - I just leave it out. It works fine with things like quorn lasagne made with passatta , stir fries with tofu , fajitas etc I wouldn’t overthink it

We have this issue in our family. All veggie and IBS triggered by onion. If you want an easy go to then Aldi do packs of Emmental & Asparagus parcels and also Cranberry & Camembert lattices which cause no dietary issues. In the frozen section.

I'd do chilli and jacket potatoes then cheese and leek potato topped pie then toad in the hole and veg. Lots of stodgy carbs and no onions.

I have vegan family & when they stayed recently, I made these in advance & froze - they can all omit onions easily:

aubergine parmigiana

white sauce & green veg lasagne

stuffed butternut squash

(you can slice this like a roast & rest of us had roast beef Sunday lunch)

stir fried rice with veg - made like egg fried but used grated tofu instead

dried porcini risotto

brubch with crumpets, avocado, garlic mushrooms, big slices of grilled tomato

I also bought a loaf of vegan pastry things by Higgledy. Own brand cheap garlic bread baguette at Aldi is vegan!

A bean chilli would be amazing for me. Obviously leave out the onions. Or else some kind of pasta dish. I recently made a spinach and ricotta pasta with pesto and green beans which was really nice.
