What do you bake for Christmas?

I like baking but never really do anything at Christmas because nobody likes mince pies or Christmas cake! What can I make that's lovely and Christmassy please? But isn't mince pies or Christmas cake!

Dozens of cookies and also shortbread
Gingerbread men
Pecan pie
Pumpkin pie
Cinnamon rolls for Christmas morning breakfast
Mince pies with Viennese whirl topping

Last year I baked baileys bread and butter pudding and it was amazing. This year I'm not sure, we don't like anything with fruit in so I might do a cheesecake (hardly festive but I can do white chocolate and baileys one)

Snickerdoodles I don't know why they are not much of a thing here in the UK, they are so good (despite the ridiculous name).
