Normally, I'm the lone veggie at Christmas and usually just buy a pie or nut roast or stuff a couple of mushrooms and am as happy as Larry.

This year, there will be 4 veggies and 2 carnivores. However, one of the veggies doesn't eat mushrooms. Nearly every nut roast recipe I can find has mushrooms in, and most of the ready made ones I've seen in previous years have had mushrooms in. Any ideas for not too fussy, non mushroom mains, please?

Also, need one more main meal too. Wondering about some kind of lovely vegan stew with hassle back vegetables. Or maybe a stuffed butternut squash?

They went really well with all the traditional Christmas roast veggies.

It's the Dauphinoise potato part that made it really special and tasted very festive and Christmassy. So I think if you want something without cheese you could swap it out for some home-made sage stuffing or a more moist vegetable and it would be equally delicious but would go well with gravy.

They were also very easy. If you make the Dauphinoise the day before, it cools into something that is easy to slice and manipulate. They didn't burst either, which I was worried about.

How about stuffed courgette instead of mushrooms? I'm not vegetarian but I'm a massive mushroom fan, so if I ever go anywhere and there's a veggie mushroom dish I always choose it.
I don't like (and can't eat) many vegetables, but courgette is okay with me. Although a stuffed red pepper may look quite Xmassy!

I replied last night about lentil loaf, but it doesn't seem to have sent. I've got that recipe and it definitely sounds like something that would go well with all the trimmings.

I've also got an Anna Jones book on my Kindle, so will look into her more. I do find that her recipes tend to involve a zillion ingredients though!

I'd be very happy with a platter of stuffed vegetables, but not sure what I'd stuff them with. I usually do mushrooms with stilton and walnuts (I know I said no cheese, but the stilton definitely works) but don't think that would work so well in a pepper or courgette as there's more hollow space to fill than in a big mushroom, so think they'd need something a bit more substantial and it would still need to go with the potatoes etc.

Looking at your link now, Dragon. It's all making me very hungry!

I'm a big fan of the lentil loaf. It also works really well cold sliced with salads and pickles etc
