Normally, I'm the lone veggie at Christmas and usually just buy a pie or nut roast or stuff a couple of mushrooms and am as happy as Larry.

This year, there will be 4 veggies and 2 carnivores. However, one of the veggies doesn't eat mushrooms. Nearly every nut roast recipe I can find has mushrooms in, and most of the ready made ones I've seen in previous years have had mushrooms in. Any ideas for not too fussy, non mushroom mains, please?

Also, need one more main meal too. Wondering about some kind of lovely vegan stew with hassle back vegetables. Or maybe a stuffed butternut squash?

Aubergine based nut roast is really nice. I haven’t made one but been served one. I think my friend said it was a Mary berry recipe.

Some non mushroom things I’ve done:
Onion tarte tatin or beetroot tarte tatin
Toad in the hole (veggie sausage)
Veggie haggis

For your other recipe, the green roasting tin beet Bourgignon is lovely. You can just leave off the mushrooms from the one who doesn’t like it.

Slight tweaks - I reduce the paprika a bit and add some freshly ground cumin and coriander seed. Cranberry decoration is optional!

I’ve found the same with nut roasts and mushrooms - which do not agree with me at all - but someone on another thread today just shared this recipe which I have bookmarked realfood.tesco.com/recipes/vegan-nut-roast.html

This is a thread from last year referring to the delicious Cranks Entertaining Nutroast. It is so easy to make in advance and freeze. I have made it gluten-free or works with normal bread. Last year I didnt have chestnut puree only chestnuts in a pouch - they blitzed up easily enough.

It doesn't have to have cranberries. You could use toasted sesame seeds or veggie stuffing mix or anything else you like really!

It’s not difficult but it does have a lot of steps - make stuffing, separate eggs, blend parsnips etc. But it comes together to look special. Definitely don’t try to cook it on the day as I don’t want to be responsible for tears!

The roulade is amazing! I have it every year since my brilliant SIL made it for me one Christmas. Luckily my DH is a great cook and doesn’t mind the faff (much).

Why not just swap out the meat for a beyond burger and have all the lovely veggies, stuffing and gravy.

My kids love fake meat so we always have vegetarian sausages or quorn roast. M and S usually do fake pigs in blankets.
For me I love something like roast aubergine so it’s just a chunk of something to go with the trimmings - really don’t like having something totally different to the others.

I go lazy and get the Quorn roast thingy. Serve with all the trimmings, cooked veggie (usually don't do pigs in blankets as I cante be arsed faffing about with veggie cocktail sausages but the Richmond 'bacon' seems as though it would work well if I could be bothered).

Oh no no mushrooms! Was going to suggest that when I just read the title. What about Nigella's pumpkin and goat's cheese lasagne? I've always wanted to try it but never have.

I might try making some veggie pigs in blankets, but definitely don't want fake meat as the main thing.

Also don't want cheese (Cheese with gravy?! The horror!) and don't want anything that is just a vegetable, like cauliflower.

I'll dig out Rose Elliot too. Have got loads of veggie cook books so might do a trial run of a couple of things.
