Am sure this must have been done before but I went and did a search and nothing came up. We both like Zoey/Zoe but can't decide on the spelling. I like Zoe and he likes Zoey. I think Zoey is too America but then Zoe does look like it would rhyme with Joe. So I just want to get an idea of your thoughts. Thank you for taking the time to reply!

You don’t need a y on the end, it’s completely redundant. I really don’t think people will think it’s pronounced to rhyme with Joe if you spell it Zoë.

Zoe is much nicer than Zoey. It's a well recognised name so I don't think many people with pronounce it to rhyme with Joe.

The diaeresis on the e, indicates how to pronounce it, so spell it Zoë

Use the dieresis to indicate the pronunciation if you want to be super sure nobody tries the rhyme it with Joe. But they won't. Zoey is a big fat noey.

I have a 6yo Zoë (we write it "with dots" as she'd tell you). No one has ever mispronounced her name.

Zoë is a 3rd century name that is well established, and has had 2 saints. It comes from the Alexandrian Jews translation of the bible, where “Eve” was translated as Zoë, being the Greek word for “Life”. you are correct, but use the dots
Zoey is a modern corruption.
It depends whether you like ancient tradition and correctness or modern and trendy made up spellings
