Of your options Bethan and Gregor as the two y sounding names sound rhymey and not quite right together.

However I like them mixed up and would go for Bethany and Gregor.

When I hear Gregor, I think of moustaches and big furry Russian hats. Sorry.

As pp have said, the two 'y' sound a bit twee! Bethan and Gregory gets my vote.
