... so it's autumn clearout time, which also means emptying out the freezer. It turns out I have inadvertently created an ice cold love palace for the procreation of a million sausages. I need to make a Whatchagot Casserole STAT. Any tried and tested recipes?

I found this and I have mediterranean veg as well as some lentil mix that is pre-soaked because I forgot I did it last night for another reason so this seems a good call, but any better ideas? I have quite a lot of cupboard stuff, so looking to use stuff up... but could also pop to Tesco as someone has rudely drunk all the wine (probably the sausages, explains the sex rampage).

Sausage bean bake, it is a bit coronary but its lush.

Sausages, couple tins beans, add some cut up cooked bacon, mix, then cover with mash, and a sprinkling of cheese. Bake in the oven til the cheese is all melted and crispy...

my fave recipe for using up sausages is sausage and fennel pasta.

That sounds a bit cassoulet-ish. Add tomato, some beans, paprika and thyme. And some bacon?

We’re having Delia’s sausage casserole tonight. Basically sausages, onions, mushrooms, bacon, braised in red wine and served with mash. Proper hearty!

Strip them out of their skins and make sausage burgers. Add whatever additional ingredients you like to make them a bit fancier.

Strip them out if their skins and brown them in pan, break them up as they cook, with onions, garlic and mushrooms. Throw in some of your lentil mix and your usual cottage pie seasonings and make a sausage & lentil cottage pie. Would probably be good with leek and potato mash, which includes lots of butter and black pepper, on top.

Break them up and brown them in a pan with onion and garlic, add some stock, a splash of wine and some creme fraiche, stir in a dollop of pesto (colour of your choosing) at the end of cooking and serve with pasta.
