Sausages have been having sex in my freezer...

... so it's autumn clearout time, which also means emptying out the freezer. It turns out I have inadvertently created an ice cold love palace for the procreation of a million sausages. I need to make a Whatchagot Casserole STAT. Any tried and tested recipes?

I found this and I have mediterranean veg as well as some lentil mix that is pre-soaked because I forgot I did it last night for another reason so this seems a good call, but any better ideas? I have quite a lot of cupboard stuff, so looking to use stuff up... but could also pop to Tesco as someone has rudely drunk all the wine (probably the sausages, explains the sex rampage).

I make this loads. I use haricot beans instead of cannellini, prep the day before then stick it in the slow cooker.

I do sausages as the meat for a roast, so bangers, red cabbage, stuffing gravy etc.

Toad in the hole

Squese out the meat into balls and use them as meatballs or wrap bacon around them and bake and they make great stuffing ball alternatives.

Cook them and put them in the fridge for lunches/breakfast

sausage sandwiches

Chop up cooked, cold sausages and add to frued onions, copped tomato and feta, serve with any carb and veggies

Honestly finding a trove of sausages would not be an issue in my house!

I’d get some pastry, strip the skins and make sausage rolls. Or one giant sausage plait. Grate an apple to add to the sausage meat, and put some chutney on the pastry base.

Sausage and carrot (grated) makes a fantastic pasta sauce + tin tomatoes.

Sausage pasta.
Warning - contains coriander (I know it's the food of the devil to some strange people)

*Squeeze out of skins
*Fry in a small amount of olive oil with a chopped red onion, few garlic cloves and most of a pack of chopped coriander
*Add a tin of chopped tomatoes. Cook out for 20 mins
*Add a glug of cream
*Add cooked pasta (penne or fusili)
*Sprinkle with the remaining coriander
*Scoff & enjoy

Stick the sausages in a saucepan to brown. Whilst that happens slice an onion - I like to leave it in half rings. Stick that in with the sausages, try to get the sausages on top so the onion cooks.. Meanwhile chop some garlic. Once the onions are done enough for your liking (personally I don't mind them still a bit crunchy, but it depends how much wine I've had by this point) add the garlic. Give it a good splosh of Worcester sauce or balsamic vinegar and add some herbs if you have them. Pour in a tin of tomatoes (or, chopped up fresh Tom's if you've accidentally got too many). Let it simmer until the sausages are deffo cooked. Add spinach or chard (or kale if you're a masochist). Serve with carb of your choice

Hairy Bikers sausage casserole - my family’s favourite

Your lentils and med veg - I would fry the sausages and cut them up, roast the veg separately whilst sausages cook, then mix it all together in the sausage pan and add lots of chopped herbs.

I second Hairy Bikers sausage casserole. Also BBC Good Food sausage and winter greens canneloni - I just make the ragu and have it with pasta and lots of Parmesan.
