...to ask for your best veggie dinner party recipes?

I am unexpectedly hosting new year's eve, for veggies. Guests are going to bring a starter, pudding will be fruit and cream based. What can I do for a main? Please hit me with your best easy recipes!

Depends on the vibe you're going for but pesto pasta is always a winner in our house. You can add some sun-dried tomatoes and maybe mozzarella.

I love veggie tex mex! Some veggie enchiladas, a build your own veggie fajita station and some tacos? Nachos are veggie too! In the fajitas I normally just do various veggies but in the tacos I do meatless mince.

Are you trying to go fancier than that? I normally make a veggie / vegan "beef" wellington, dauphinoise potatoes and some fresh veg. More effort but better if you're in a fancy mood!

For veggies on xmas day I baked some butternut squash, fried leeks in butter with garlic and salt and pepper then layered it in a pie dish, crumbled feta on top.
Then I scrunched up Filo on the top and brushed butter on it, baked for around 15 minutes
Everyone seemed to enjoy it and it looked good too

I would do something much better than that. That's what my toddler eats for lunch!
How about a veg chilli, curry or a proper pasta or even a lasagna and some nice bread.

Just do somthing Indian. They've had several thousand years experience in the art of vegetarian/vegan cuisine. Italian stuff is just mainly pasta, tomato and cheese with other odd bits. It needn't be too spicy if they're not into that.

But what do I know? The last time I suggested cooking advice on here was my recipe for microwave meringues. The OP has never got back to me even though she said that she was going to try them.

Um. Don't do this. Firstly, most pesto isn't veggie due to the parmesan. Secondly, pesto and pasta looks like you've made the bare minimum of effort.

I make a lovely mixed bean, lentil and veg chilli. You could do a massive pot of that with rice, nachos, salad, sour cream etc. Tofu and veg Thai green curry also goes down well!

Id do a mushroom and chestnut Wellington, have used the same recipe for years, if you want something more formal, otherwise id consider really lovely roasted veg ( courgettes, aubergine, butternut, carrots, onion, mushroom, cherry tomato) with cous cous and feta and a sprinkling of toasted pine nuts with some separate fennel salad on the side. Very different types of meal so friend what you are doing for the non vegetarians to tie in.

We did Mushroom and Stilton Wellington Christmas Day. 10 mins prep, (ready made puff pastry) - amazing and so easy.

I did this Moroccan Spiced Pie for my vegetarian son and partner for Christmas Day - it was lovely and went down really well. Was also really nice cold the next day (you could use bought hummus instead of making your own, I think).

Here you go - I make it look a bit fancier by using scrunched up filo on the top too! Brush with melted butter and bake for 5-10 minutes. Obviously if you want it to remain vegan don't do that bit!

I'm leaning towards a pie or a wellington - not a fan of sloppy...
Guests eat a lot of Indian (one family member who isn't coming is vegan), so will try and do something they don't usually eat.

Fancy pie this is really good
My partner makes roast veg in pastry sometimes ( just roll type) like a sausage roll you can make it look as fancy as you again gets asked by friends to make it

Parmesan cheese isn't vegetarian, it contains rennet. Made using the lining of a cows stomach!

I would do a mushroom wellington or similar. Definitely not pesto pasta, that’s a quick lunch for me not a dinner party option!

We used to use this Vegan parmesan or Lidl one but I don't believe they do it any longer. ( I keep in the freezer )
That bosh mushroom wellington ⬆️ is good, you can buy roast chestnuts in home bargains for under £2 for a decent sized bag

Delia smith has a great roasted Mediterranean lasagne or spinach and four cheese lasagne recipe.

Hugh FS has a kale and mushroom lasagne recipe. Or his “ Veg” book has loads of recipes you could make up a lovely spread of small plates.
