I am unexpectedly hosting new year's eve, for veggies. Guests are going to bring a starter, pudding will be fruit and cream based. What can I do for a main? Please hit me with your best easy recipes!

For Boxing Day and our vegetarian guests I did
waitrose nut roast ( chestnut based very pretty)
Spiced braised red cabbage with apple onion sultanas and sherry vinegar - look up Christmas red cabbage
cauliflower cheese
roast potatoes, parsnips and carrots.

You make the red cabbage and cauli ahead of time , roast veg is in the oven when guests arrive and you just heat up the nut roast for 5 mins.

If you have a deep fat fryer then vegetable and tofu tempura is easier than it looks. You can cut up the tofu and marinade it to get different flavours.

You can make a lovely veggie wreath that looks great. The recipe sounds complicated but it's super easy.
Do a mixture of roasted butternut squash, carrots and red onion - roast until soft but not browned. Mash them up a bit with an egg to bind it and add nutmeg, salt and pepper. I've added a bit of fried kale, sage, chestnuts and finely shredded sprouts to use them up before and they go really well too.
Then use a sheet of puff pastry and roll it to a thinner, long rectangle and make a filled veggie roll, like a sausage roll. Join the ends together to make a circle, then score it through to create mini rolls, separate them out a bit. Brush with egg wash and add some decorations like stars or holly. Sprinkle with poppy seeds if you have any then bake it at 180 for about half an hour.

Agree with the previous posters recommending a filo pie! I generally fill with whatever veg i have roasted and mixed with feta, spinach and harissa. If I'm feeling extra fancy I'll make it borek style - something like this as a base recipe is good

Also - ottolenghis cauliflower cheese pie is a winner and looks delicious. It's extremely cheesy so quite decadent and looks great for a party.

I wanted to use up leftover Christmas vegetables so I fried large shallots in butter, and part boiled carrots and Brussels sprouts. I made creamed leeks, literally just fried the leeks added a tub of cream and Parmesan cheese, put it in an oven dish and topped with homemade breadcrumbs mixed with Parmesan cheese and baked. I can honestly say it was one of the tastiest dishes I have ever made

Depends on the vibe you're going for but pesto pasta is always a winner in our house. You can add some sun-dried tomatoes and maybe mozzarella.

I don't really think that's special enough for guests...

We had carrot tart tatin at Christmas (actually carrot and parsnip). You need good carrots, I got mine from the local farm shop.

@abbey44 I was thinking of doing that for the vegetarians at Christmas but opted for a squash, beetroot, mushroom and chestnut wellington instead. Just because of the oven juggle. I will give it a try - thanks for letting me know that it is worth doing.

I used to make something similar to the mushroom pithiviers but with chestnuts, shallots, celery and mushroom filling. I threw it together one year in a panic and everyone loved it.

DD added chestnuts to the filling instead of spinach.

I'm leaning towards a pie or a wellington - not a fan of sloppy...
Guests eat a lot of Indian (one family member who isn't coming is vegan), so will try and do something they don't usually eat.

If you’re thinking pie this one is really easy. Fry red onion and garlic til soft, add and fry nice mushrooms e.g. chestnut mushrooms but you could do a mix. Melt in some Boursin. Season. Place the mix in ore-prepared puff pastry and fold over, you can scrunch the top or however you prefer. If you want to go fancy, cut out some pastry leaves and berries and add to the top. Glaze with beaten egg. Bung in oven as per cooking instructions on the pastry. Enjoy!

Boursin is a good call. We often add Philly cheese to make a sauce creamy.
