To ask you what quick dish would you make for tea?

Needs to be veggie.

Tea has gone wrong and doing the food shop tomorrow… I’m probably going to have to nip back out to the shops. DH and I usually eat around 8-9 anyway so it’s fine in that sense, but need something quick, filling, relatively healthy-ish and with little washing up to do.

What would you make/throw together?

I had stir fry and falafel balls tonight. If you buy the pre-cut veg in a bag it's very easy. Added some mushroom, tomato and spinach. The kids / dh had theirs with noodles and a fried egg.

pasta pesto with scallions, peas and mushrooms. You could add grated cheese or whatever you fancy

We have just had a very nice quiche with roasted Mediterranean type veg , it was much nicer than I expected

Eggs is my go to when I don't have energy for making a meal. Usually a simple omelette with some bread/hummus too

For two:
fry sliced garlic and chilli, add a tin of tomatoes and a handful or two of frozen peas. Break in four eggs when bubbling and cover. Serve when whites just coloured up and set - serves with couscous, jacket potato, rice as required. For more pzazz, add some grated lemon zest and/or some basil and top with freshly grated parmesan.

Feta and tomato pasta, bake cherry tomatoes. Feta and garlic drizzled in oil for 30 mins, cook pasta, when the Feta and tomatoes are bakes mix it all up (crush the garlic with a fork) then mix with the pasta

One pan thingy - I’d roast whatever veg is lurking in the fridge - cherry tomatoes and peppers would be ideal but chopped courgette, mushroom, leek, anything like that. Boil pasta. Tip pasta into roasted veg. Stir in Boursin garlic cheese. Super easy and delicious.

or pesto pasta - but I really like pesto, pecorino (tescos is vegetarian) and pine nuts. They add a lovely texture. You don’t need many.

Vodka pasta from bbc good food is quick and really tasty obviously need to have vodka in though.

Spanish omelette, use up the leftover veg in the fridge or raid the frozen veg in the freezer.

Pasta Primavera, put spaghetti/linguine or your preferred pasta on to cook, meanwhile cook any combination of green vegetables available, fresh or frozen eg peas, green beans, mange tout, spring onions, spinach etc.
Drain cooked pasta, toss with the cooked vegetables and serve.

Can make a good lamb karahi in my pressure cooker in 35 mins :)
