To ask you what quick dish would you make for tea?

Needs to be veggie.

Tea has gone wrong and doing the food shop tomorrow… I’m probably going to have to nip back out to the shops. DH and I usually eat around 8-9 anyway so it’s fine in that sense, but need something quick, filling, relatively healthy-ish and with little washing up to do.

What would you make/throw together?

I'd open the fridge door and start getting out whatever veggies I have in, while waiting for inspiration. In fact, that's usually what I do most days.

This works better for me (just ordering a load of random stuff that I like to eat and working out day to day what to actually make into a meal.

My local Co-op & Sainsburys local both do vegetarian sausages, so if I was stuck I’d get them, microwave mash & baked beans.

Vegetable Thai green curry. You can buy the paste ready made then just add coconut milk and veggies and serve with rice.

@ChimneySweepLiverpool I’ll be honest I literally just chop them up and bung them in plain (and then just keep checking on them every so often)
you can obviously use any seasoning you like on it too (garlic, paprika etc) but I just put a bit of salt on after they’re cooked.

Those Itsu ramen stock cartons are amazing. Vegan or chicken. They keep in the fridge. I sex them up with some extra garlic and chilli. Soften a leek or some spring onions. Add lots of mushrooms or maybe firm tofu. Add stock. Bring to gentle roll. Throw in some pak Choi or cabbage maybe? Dried noodles. Five mins. Lush ramen soup

You can buy haggis slices that you microwave for 60 seconds. Boil kettle to make bisto granule gravy. Instant mash sachet with a knob of butter.
Burns night supper in 3 minutes.
Not saying it's good for you, but in an emergency...
