What do I do with chicken breasts

Whathappenedtoibiza · 23/04/2024 21:46

Have family staying, they ask for chicken most meals. It’s warm/hot where we are so I’ve been doing with salad, potatoes, wraps. Getting a bit bored of the plain chicken breasts, what can I do to them to add flavour? Cheese, tomatoes etc 🤷🏻‍♀️

You can slice them lengthwise so that they're thinner and easier to cook/grill, and you can marinate them. The possibilities are nearly endless and the flavour will be amazing.

Whathappenedtoibiza · 23/04/2024 21:52

@Aquamarine1029 Any ideas? Sounds nice

I frequently make a teriyaki style or marinade with soy sauce, ginger, garlic, brown sugar, etc. Easy and delicious. Using yoghurt with garlic and herbs is easy, too.

Marinated chicken & veg kebabs on skewers, barbequed. Serve with salad / cous cous / stuffed peppers / whatever

Herb & Lemon chicken with potato salad

Spiced chicken, sliced, put on to a wrap with Mozarella and spiced rice, fold in half and toast in a hot pan on either side until golden.

Chicken curry with rice and flatbreads

Any need to be so rude? Not everyone is good at cooking, and you can’t learn without help.

@Whathappenedtoibiza wrap them in bacon and oven cook in a BBQ sauce and then put cheese on top for the last 10 mins.

nadine90 · 23/04/2024 22:01

Peri peri seasoning, stir fried with peppers and onions for fajitas
Cajun spice seasoning with crème fraiche, tomato purée, Parmesan and spinach with pasta
Wrapped in pancetta or bacon with cheese
Any type of curry
Smothered in bbq
etc etc
If cooking’s not your thing, those cook in the bag seasoning kits are tasty and easy x

AliMonkey · 23/04/2024 22:02

Chop up veg to roast - I usually do new potatoes and carrots, toss in olive oil, cook for 10 mins at about 180 fan, then add tomatoes and peppers, along with the chicken breasts and top with eg blue cheese and onion chutney or cheddar and chilli chutney, cook for about 25 mins, serve with green veg or salad.

Or stir fry with veg, teriyaki sauce, cashew nuts, noodles. Or coat in herbs/spices and either panfry, or cook in oven on top of passata and top with mozzarella and mushrooms to make "pizza chicken".

Moier · 23/04/2024 22:03

I’d much rather ask for helpful suggestions like the op has, rather than be condescending and rude like you.

op - chicken, broccoli, edamame and creme fraiche (with sautéed onion and garlic) as a sauce, stirred through linguine. Quick, so easy and super tasty.

noimnotbutyoushouldseeyourfaces · 23/04/2024 22:04

Lemon juice, salt, cracked black pepper, a few crushed garlic cloves and a bit of olive oil. Pup them all on a tub, shake it up and leave in the fridge until you're ready to grill them.

The easiest seasoning ever and hits the spot every time. Can be served with salad, potatoes etc or on a brioche bun with wedges and bit of bacon if you're feeling wild 😂

bryceQ · 23/04/2024 22:04

Dry rub a spice mix
Fry in pan to brown
Reduce heat and add some bbq or tomatoes to bottom
Pan on
For 40 mins
Make sides like spice corn or sweet potato fries
Take chicken out and pull apart with forks and add back to pan
Serve in brioche buns with sides and sauces

Needanewnamebeingwatched · 23/04/2024 22:07

Sticky chicken

Chicken breast chopped up.

add soya sauce, black pepper, garlic powder, onion powder, paprika, honey and corn flower to a bowl and mix, then add the chicken.

Chuck it all in a frying pan/wok and stir till cooked

Add rice

Eat

Thelnebriati · 23/04/2024 22:07

Try the teryaki marinade that Aquamarine1029 posted, with lemon zest and juice. Or try miso in place of the teryaki.
Its really easy to marinade meat, chuck it all in a plastic bag, add the meat, mix it well then bung it in the freezer. I also works with pork.

Add diced pickles, yellow mustard, onion powder and dill to mayo. Use that for chicken salad and add cherry tomatoes and Chinese leaves. Its nice as a salad or in a wrap.

Peruvian chicken - fry the meat and some diced onion, add a can of tomatoes, sweetcorn, chilli, red pepper, chipotle and thyme. Cook for 20 minutes. Serve with rice, cous cous or quinoa.

TheHateIsNotGood · 23/04/2024 22:10

Dice and stir fry with any ingredients to hand. Serve on/with pasta, rice, potatoes, cous cous or whatever you have.

Friendofdennis · 23/04/2024 22:12

mix 1 tablespoon mustard with 2 tablespoons of honey. Drizzle this over raw chicken and cook slowly for 40 minutes basting every ten minutes. cover with tin foil for the last ten minutes so that it does not dry out

Here's one I've used before

What do I do with chicken breasts
ODFOx · 23/04/2024 22:18

Tomorrow I'll be butterfly cutting and then flattening one chicken breast per person, laying them out into a big rectangle, then rolling into a big sausage filled with chopped blanched spinach, sautéed onions, chopped parsley and mint, and crumbled feta . I'll be baking it and then serving slices with a selection of vegetables and a sauce made with spinach, feta and parsley and a little cream.
It's always a crowd pleaser with my family.

VeraForever · 23/04/2024 22:18

Slice trough , width ways, flatten them a bit.
Coat in flour, then beaten egg then breadcrumbs.

Shallow fry on each side til golden brown.

Chicken schnitzels.

OneTC · 23/04/2024 22:20

I normally use thighs but it'll work with breast you just need to cook it a bit more carefully

Cube the meat, do it evenly so they cook evenly
Put meat, sesame oil, add squeezy honey, add soy sauce, 1 sliced red chilli, 2-4 sliced cloves of garlic into a bowl and leave while you get the rice ready.

Toast some sesame seeds in a large dry frying pan or wok, set aside
Cook the chicken honey etc in that pan or wok, let it cook until the sauce thickens up a bit and the chook is cooked through
Put chicken on rice, sprinkle with the toasted sesame seeds

I normally also stir fry some green beans in a small separate pan with salty crispy chicken skin as a side

Chicken (I buy skin on thighs so I can use the skin for the beans but it's easily left out)
Red chilli
Garlic
Sesame seeds, quite a lot
Enough honey and soy sauce to properly cover them whilst they sit in the bowl
Rice
Sesame oil for the chicken
NOT OLIVE OIL for your cooking oil*

Fine beans

*Peanut oil, rice bran oil that kinda thing

Just no need is there? 🤨

OP as suggested, marinated or stuffed. You can also knock up any number of simple sauces to whack on chicken & serve up with rice, potatoes, cous cous etc.

Whathappenedtoibiza · 23/04/2024 22:26

Thank you, some great ideas, will start with a yoghurt, garlic and lemon one first I think
