What do I do with chicken breasts

Have family staying, they ask for chicken most meals. It’s warm/hot where we are so I’ve been doing with salad, potatoes, wraps. Getting a bit bored of the plain chicken breasts, what can I do to them to add flavour? Cheese, tomatoes etc 🤷🏻‍♀️

We had them last night with halloumi stuffed inside and siracha and honey marinade on top.

Chicken breast (cheats) roast dinner

I made my own stuffing with breadcrumbs (I make a load at a time just plain white bread in a mini food processor) diced onion and mixed dried herbs. Knob of butter.

serve with mash veg and gravy

BBC Good Food is fab for allsorts of recipes. We loved a slow cooker recipe for Spanish chicken with chorizo, peppers & stuffed olives.

When you feel the need to start a sentence with ‘I’m sorry but…’ it’s usually an indication that what you’re about to write is bitchy, inappropriate or out of order, so you should probably just not bother.

OP, Sticky Pineapple Chicken
diced chicken, diced pineapple, pineapple juice, hoisin sauce, brown sugar, garlic, soy sauce, chicken stock, cornflour, cashew nuts.

Chuck all the liquids, garlic, sugar & cornflour into a pan, mix and bring to boil and cook until thickened.
Fry chicken in olive oil with salt n pepper. Drain off any liquids, then add sauce to the chicken. Stir and add pineapple chunks and cashew nuts. Cook until chicken is fully done.
Serve with rice

I find lots of people who are keen on chicken find they enjoy pork if given the alternative, and cooking it in the favoured way you do chicken helps. Might alleviate the boredom.of it and open up some new cooking avenues (apologies if pork is not on your menu, for religious or taste reasons).

My local Butcher does chicken breast with brie and garlic stuffing wrapped in bacon. They also do mango lime and coconut.
These are combinations I would never have thought of because it involves too much headspace.

Fry chopped chicken in olive oil. When nearly done, add chopped onion and a clove or two of minced garlic and gently fry until soft. Add sliced mushrooms and cook until the chicken is cooked through. Take off the heat and add a tub of Philly cheese. Stir through and heat until just this side if boiling. Serve with rice. (You can also add chopped smoky bacon to the pan when you fry the chicken). Super easy and very quick.

Boursin spread on top, wrapped in prosciutto or similar, in the oven for 30-35 minutes. Yummy chicken with bonus creamy sauce.

Chopped cauliflower, broccoli, onion, thinly sliced potatoes, savoy cabbage and carrots sprinkled with Chinese chilli salt and pepper seasoning oven tray baked with chopped chicken covered in the seasoning. It's so good, even better when the veg is slightly burned at the edges.
Even my fussy kids eat everything.

If you want something a bit different to the above, BBC good food have a recipe for chicken and pea risotto which is really simple. DS has been making it pretty much by himself since he was 10 (although I always chop up the chicken as we almost had chicken and finger risotto the first time and I've been nervous since!)

Chicken salad! I love it but it doesn't seem to be a thing in the UK but it's a taste sensation. Kind of like tuna salad but with diced chicken instead. Good with dill and apples too but nuts and grapes are classic.

Soup . Cut the chicken into small bite sized pieces, mix in a spoon of thai red curry paste, let it marinate for a few hours. Fry an onion, add the chicken, add stock and coconut milk, bubble away for a bit. Add instant noodles, peas, chopped up veg of choice. Serve 😋 nom nom nom

I do a chicken and broccoli pasta dish with a creamy sauce
I also do spicy blackened chicken with rice (marinade chicken chunks in curry paste of your choice, garlic paste and a little tomato puree. Cut plenty of onions into wedges/large slices. Fry onions over a high heat, stirring frequently, until they start to go black. Push the onions to the side and add the chicken in small amounts, searing on all sides, then moving to the side and adding the next lot. Once all the chicken has been added mix the onions and the chicken and find his to cook on a high heat, stirring all the time, while your rice cooks (if white rice that takes around ten minutes, otherwise put the rice on earlier). You should end up with very caramelized chicken and onion.)

And does it have to be chicken breast? It would be for me because I don't like the dark meat, but apparently the thighs taste better (I don't like the texture)
