I am a home baker, and I just can’t seem to find a good chocolate cake recipe that works well every time. (Not that I make chocolate cake very often). I have great recipes for vanilla cakes and chocolate cupcakes (too light to be used as a cake sponge) but not chocolate

There are so many online, some with coffee, or buttermilk, some use oil instead of butter. Also such a massive variation in egg amounts too

do you have a go to and want to share with me?

Mary Berry's chocolate victoria sponge works perfectly for me every time! My mum used it for our birthday cakes every year and I am now continuing the tradition with my own kids.

I always weigh my eggs first. So say 4 eggs and they might be 9 oz. Then I add 9oz of flour/cocoa powder/pinch baking powder, 9oz stork and 9oz caster sugar.

I first mix the sugar and stork then gradually add the flour/cocoa/baking powder mix and the eggs together. I don’t actively weigh my cocoa out but I don’t go mad with it. I just make sure that all together the cocoa, flour and baking powder pinch is the correct weight.

bake at 180 for 19 mins

For a celebration cake esp kids bdays this one though usually do normal chocolate butter cream and decorate with sweets or whatever

Basically weigh an egg, equal quantities of sugar, fat and flour ( SR flour 3/4 to 1/4 cocoa) and a teaspoon of baking powder for each 100g of eggs. All in the mix and I add a slosh of milk.

Easy and delicious. The recipe tells you to chuck it all in together, but I creamed the butter and sugar for a while first. Also only made half the amount of buttercream, which was still plenty!

Not guna lie, it makes me want to try all the recipes and find a winner. Better not though or else I’ll be rolling into work for the foreseeable future. Thanks everyone! Will certainly give a few a try next time I need a chocolate cake

Chocolate cake is so tricky ,
, I tried so many famous ones like Nigellas and Marys recipes , but most just turn out too dry and taste quite flat , even though I use excellent chocolate like Valrohna. The only one that is just right and always turns out so rich and chocolatey and so delicious is Joy of baking Chocolate genoise recipe.
