I am a home baker, and I just can’t seem to find a good chocolate cake recipe that works well every time. (Not that I make chocolate cake very often). I have great recipes for vanilla cakes and chocolate cupcakes (too light to be used as a cake sponge) but not chocolate

There are so many online, some with coffee, or buttermilk, some use oil instead of butter. Also such a massive variation in egg amounts too

do you have a go to and want to share with me?

This one is my go-to chocolate birthday cake. It’s like a cross between a sponge and a brownie. I don’t make it look like a cat, and I usually use ganache rather than buttercream. Also I only halve it rather than trying to slice it into three because I am inept.

The best one ever is Nigella's chocolate fudge cake made with sour cream. It is in the Feast recipe book. It is so moist and very easy to make.

Oh it is definitely this one.

I've made a few of the ones above, but this one I never went back from.

I don't bother with the coffee, I make about half to a third less frosting, and I do find it takes a little longer to cook than the recipe states but on my goodness it is DIVINE.

Mary Berry as you mix the cocoa powder into a paste. It works so well.

Whatever recipe you go for, bung in 2tsp of instant coffee - you can't taste it and it'll bring out the chocolate flavour.

Made this last week practicing with my giant cupcake mould and it was fab, very dense and moist like a lava cake:

BBC Easy chocolate fudge cake, sorry I don't know how to link it. The batter is almost liquid which is a bit of a shock first time. I've made loads of them and never had a failure. Have done many versions, even used it for a birthday cake covered in fondant., did it as a hedgehog a couple of times too. Takes all of 10 minutes to put together. It's inclined to rise a bit much if you plan to decorate it so don't be tempted to turn the oven up or you will have cut the top off to level it.

Basically weigh an egg, equal quantities of sugar, fat and flour ( SR flour 3/4 to 1/4 cocoa) and a teaspoon of baking powder for each 100g of eggs. All in the mix and I add a slosh of milk.

I third (or 4th) Nigella’s chocolate Guinness cake - it’s dense and moist without being brownie like (I love brownies, but when I want cake, I want cake). And so flavoursome.

You don’t have to use Guinness - any stout will do.

delia smith’s all in one chocolate cake. Bung everything in the food processor, whiz for about 40 seconds, put in oven. Magic. W chocolate fudge icing.
not fancy but really nice not too rich and very economical (no expensive chocolate - just cocoa)

Nigella's chocolate olive oil cake - I'm gluten free and it's made with ground almonds instead of flour. Always moist yet light and very chocolatey. Not one for buttercream and sprinkles though!

Texas sheet cake - super easy, super moist, and the boiled frosting (especially with nuts added) makes it sublime. Not a fancy cake, but a staple of every picnic / bake sale / birthday party when I was a child in the southern US.

a couple of reflections on what makes a good chocolate cake in general:

  • ‘bloom’ your cocoa with boiling water to intensify chocolate flavour
  • a small amount of espresso powder or prepared coffee will accentuate chocolate flavour and not taste at all of coffee
  • chocolate cake tends to be drier, so recipes with sour cream , buttermilk or yogurt tend to be better
