To make Welsh Cakes myself

I keep buying them from Ebay and the quality is variable.

Some were delivered today which seem to have had the sugar omitted from the recipe altogether. V. disappointing.

I would like to know how to make them myself. Can anyone help with a fool-proof recipe?

Tan y Castell taste of baking powder to me.

Home made are streets ahead of any supermarket brand but if you must the Waitrose own brand are the best of a bad bunch.

Tan y Castell have too much tang from the spices in my opinion. I prefer plain currant ones, warm, with sugar, ngngngn. Also a fan of jam splits and the lemon ones from Brace's.
My Mam makes rock hard little burned ones with no currants - with the frying pan, and even they are edible, so easy 😁
