To ask for tips on how to cook the perfect steak?

DH wants steak on Friday and I am already worrying that I will mess it up. The last two times I have cooked steak it was overcooked and he couldn’t eat it so please could you offer me tips to cook the perfect medium rare steak so we can have a nice dinner?

For me the resting before (for all meat) is crucial. I’d get it out of the fridge for an hour before to bring to room temperature.

I have also heard chefs say the steaks should be left uncovered to air in the fridge as well as out from the day before. Never done it as it seems a faff.

The touch method works to test tenderness.

I think you are meant to season afterwards but I’ve never thought that makes much of a difference. I do it before mostly and sometimes after.

A decent rib roast (not steak) bunged in the oven for an hour is about the most fail safe pieces of cooking you can do. Far less attention than steaks.

I am ok. Thank you. It’s just he does most of that sort of shopping so I have to ask him to get different things if we need them.

I do all of the above but i also marinade mine in plain yoghurt for half an hour before cooking. It really helps.
