the cake bits ok and so is the icing if its thin but the marzipan in the middle is the food of the devil

The problem is it's fondant icing, not proper hard Royal icing which is a must for a Christmas cake! Roll on is not nice.

Shpuld be royal. Are you sure the prob isn,t that it,s your 4th slice? But def not ureeasoable to not like icing you sound if this is unusual it,s not. I don,t mid it but often find the cup cakes with loads of icing too sickly

Yanbu. I love good almond paste but cba to make it myself because nowhere sells it. Hate fondant, though. I just decorate mine with blanched almonds before baking, like a Dundee cake.

I put the icing on just to make it keep better once I'd finished feeding it
The marzipan is the bees knees. I love it anyway but I found some brandy infused marzipan in Tesco. Its bloody gorgeous!!
How do you use royal icing on a fruit cake? Do you have to spread it on like ganache? Never worked with it before.

I love marzipan.

Not too fond of icing. (I'll eat it and won't complain. But not my choice.)

Yeah I also hate the turd style pile of icing on individual cupcakes. A teeny spread is all that's needed.

The following types of icing are excellent: cream cheese, buttercream, ganache and naice marzipan.

These are unacceptable: royal, fondant and shit marzipan.

CrimsonCattery yes, although with buttercream icing, less is definitely more.
I think I'll sod the icing altogether next year and see how some naice marzipan stands up on its own as a covering.
And to those making their own, what do you soak your dried fruit in? I tried 4 different recipes this year to try them all out (just making it a fair test!) and 1 called for orange flavoured liqueur such as cointreau, grand marnier or triple sec. That was an eye opener and I'm going for that every time now. Absolutely delicious!!

I also love Christmas cake but hate icing. It gets sliced off and binned.

You can get royal icing in a box, mix with water until it thickens, spread on the cake and leave to harden.

I agree that pre-made fondant icing and marzipan are pretty horrible. I make my own marzipan. Any excess is used to stuff dates, which are then covered in chocolate.

I've never tried making fondant icing. Must do one year. I do royal icing, which I spread quite thin.

Eurgh I hate most icing! I know it’s not a popular opinion. Buttercream, fondant, royal icing etc.
Give me a chocolate ganache anyway over a white icing 🤣🤣

I like royal icing better too, it has a slight tang
that cuts through the sweetness. Christmas cake does look beautiful, nicely decorated, but I must say I love fruitcake best uniced most of the time.

My Granny covers her cake just in homemade marzipan it looks nice and rustic, just with a dusting of icing sugar and some old fashioned Christmas tree decorations.

We often just marzipan a cake as none of the kids like icing. The marzipan protects the cake fine.
