To have lost the will re quick food ideas?

When you're out of freezer meals and feeling too tired and zombiefied to stand in the kitchen for long making something for one, what kinds of things do you have?

I've run out of ideas and am getting a bit sick of cheese on toast, tinned soup, toast or cereal.

Can people give me their ideas?! I'm drawing a blank!

I have a fab recipe for Prawn Thai red noodle soup, if you like that sort of thing give it a google. Including prep it takes 10 mins.

If I’m really not in the mood to cook I make pizza tortillas (next to no prep and tasty!) a jacket potato with beans and cheese or pasta with lots of stuff in it (tuna, peppers, tomato, cucumber etc).

Scrambled eggs with mushroom (or any other veg) and toast.
Cheesy chips.
Salad e.g. Tomato & mozzarella, leaves with sweet corn carrot & pepper.
Smoked ready to eat fish with bread or salad. I
Potato baked or as salad.

Refried bean, cheese and tomato heated in the microwave them put in a wrap that's warm from the toaster (fold into 4 to warm it).

Houmous, salad leaves and jalapenos in a toasted pitta bread.

Quick mince (onion, minced beef, tomato in the pan) on microwave rice with some sour cream.

Can you make double (or bigger) meals and freeze half? We often have leftover pots of BBQ pork or spicy chicken that we defrost and heat (microwave), then chuck in a wrap (toaster) with salad leaves.

Potato waffle (2 goes through the toaster) with grated cheese and salad cream!

Omelette with whatever is easy.

Bacon sandwich.

Greek yogurt with fresh berries warmed in the microwave and mixed in.

Onion, mushroom, spinach, tomato, pepper and garlic fried in a pan (onion and garlic first obviously, then mushroom, then the rest), mix in a little cream cheese to melt and serve on toast.

Broth with pasta or Chinese dumplings or angel hair rice noodles.

Omelette or frittata or scrambled egg.

Bacon sandwich.

Chicken Caesar salad.

Fresh filled pasta (quick even from the freezer), cook some sage leaves in butter then add to the pasta, lovely and less than 5 minutes! I often add frozen peas as well

A wholewheat wrap, spread with a tablespoon or more of pasta sauce (I use Aldi sun dried tomato), topped with a bit of Parma ham if you have it, a handful of baby leaf spinach or rocket and a generous handful of ready grated emmental (cheap from Aldi), stick it in the oven or under the grill til the cheese melts and rocket or spinach wilts. Roll it up and eat as a wrap or slice into wedges and eat as pizza.

We have this several times a week in our house. Easy peasy and ingredients always in cupboard (wrap, sauce) or fridge or freezer (rocket, grated cheese, parma-esque ham) so even the youngest can sort lunch or dinner out for everyone in a matter of minutes.

I have a bunch of frozen veg in the freezer and do a mix of onions, mushrooms and mixed peppers.

Cook them. You literally just put them on heat.

Get out a tin of mackerel in a sauce.

Add some grated cheese.

Bob's your uncle... healthy and tasty, with no effort whatsoever really.

My go to quick snacky dinners are :

Nachos with ‘stuff’ on top. I put nachos in a glass oven dish, sprinkle pre grated cheese on top and stick it under the grill to melt the cheese. Sometimes I add a couple of scoops of veg chilli (tinned and warmed in microwave). Top with salsa/ soured cream / jalapeños etc.

Pasta with red pesto.

Two boiled eggs with a side of veggies (I get the micro steam bags for quick meals). Can be bland but is filling.

Baked potato with whatever I have to hand for filling. The microwave versions are pretty decent if you are in a hurry but I do miss the crispness of a proper baked potato (not to mention they work out expensive).

I also love veg fried rice. You do need to cook the rice in advance and let it chill in the fridge for a while to stop it going mushy. Just fry it with some frozen veggies (I like peas, sweet corn and broccoli in mine but anything would do) add a tiny bit of sesame oil and a generous amount of soy sauce. Add a one egg omelette on top (or chop into bits and mix through) if you want to up the protein.

I gave up and now get Gousto or Hello Fresh every 2 weeks. It’s a joy eating well and not actually thinking. It’s only dd and I though so each meal does us twice, so it does work out cheaper than buying the stuff separately.
