To have lost the will re quick food ideas?

When you're out of freezer meals and feeling too tired and zombiefied to stand in the kitchen for long making something for one, what kinds of things do you have?

I've run out of ideas and am getting a bit sick of cheese on toast, tinned soup, toast or cereal.

Can people give me their ideas?! I'm drawing a blank!

Non dairy yoghurt, cereal and fruit tastes nice and is filing. Or I have a fresh fruit smoothie with soya milk and non dairy yoghurt. I don’t need much in the evenings.

If trying to be healthy then a veggie frittata is good as it takes about 5 mins depending on how quickly you chop veg. Fresh pasta parcels with a bagged salad takes about 5 mins.

Or just order take away... Grin

Gnocchi, a little cream or natural yoghurt, strips of smoked salmon, handful of rocket and some cherry tomatoes sliced in half.

Ramen noodles, stock cube, spring onions, ready chopped ginger and garlic, ready cooked chicken breast, frozen peas, soy sauce, throw in for a modest broth, add shredded iceberg lettuce to the top once cooked. DS makes this for his lunch often.

Ciabatta rolls cut in half, tomato paste, mixed herbs, slice of salami or ham if required, chopped olives if you like them, grated cheese, grill for a mini pizza, serve with bagged mixed salad.

Packet couscous and a tin of mackerel in sauce
Pasta pesto (chuck in any green veggies languishing in fridge)
Pasta with grated cheese and marmite mixed with a bit of the pasta water
Beans on toast

Oh and pasta with garlic cream cheese (let down with some veg stock) and broccoli. This is actually lovely and we eat it at least once a week. The carnivores add leftover roast chicken or ham.

Fried rice:

Heat oil in a pan, peel and chop an onion and a clove of garlic. Add to pan, stir regularly so they don’t burn.

Cook pouch of rice in microwave then, when onion starting to brown, add to pan along with peas, and some green veg (spinach, chopped greens, kale etc or any other veg lying around as needs using). Let the veg cook down.

Sprinkle over some soy sauce and sweet chilli sauce. Tip into a bowl and scatter with chopped spring onions.

We ALWAYS have tortellini in.

In fact, my default cooking style is something ready made, plus a good chunk of fresh veggies.

E.g.

Microwave rice plus fresh veg and prawn stirfry.
Tortellini with a handfull of spinach, cherry tomatoes and rocket
Stirfry of fresh noodles, precut veg, and prawns or chicken.

I NEVER meal plan. I just buy in a set of vaguely coherant vegtables (i.e. 'english trad' or 'mediterranean' or 'asian'), and flash fry them each night. I never waste food either. I quite like just zipping through meals like this in the week in a 'functional' way, and cooking properly at the weekend.

Had a gammon steak with pineapple for the first time in ages the other week. Took minutes to make, stuck some salad and sweetcorn on the side. Slice of bread. Done.

Garlic bread with soup is another quick and easy go-to.

Egg based things. We keep hens so always have eggs and cheese. Omelettes, scrambled egg, fried egg on toast etc

Deliveroo

Something or the freezer previously batches cooked.

Fresh filled pasta and a bag of rocket with drizzle of olive oil.

Bought fresh soup with crust bread and cheese or chicken slices.

Hummus and pita with salad/veg.

Beans on toast. Egg on toast. Sardines on toast.

Pasta with two or three types of frozen veg chucked into the same pan, serve with pesto.

Bagged stir fry.

Ramen noodle packs with added (bought) sliced chicken or prawns from freezer and something like a pack of baby’s corn and sugar snap peas. Maybe boil an egg too.

Ready meals with added veg.

Tray of the chopped veg in a foil tray, roast and eat with flavoured couscous from a packet.

Frozen fish (cooked in microwave) with frozen mash and frozen veg.

Bag of salad. Tin of tuna. Some olives and capers. Cut up some thin slices of onion and a few baby toms. Dressing.

Also the gallo dried risotto - takes 12 mins and is super easy. Eat with a bag of rocket.

If it’s just you - the tuna and couscous steam pots in the soy and ginger flavour are well nice. I add frozen leaf spinach and edemame beans and fresh baby tomatoes. All done in the time it takes to steam (like 5 mins)

Pot noodle. Mug shot. Eat carrot, cucumber and baby toms whilst kettle is boiling to reduce the feeling of zero nutrition.

Granola, banana, berries and Greek yog.

Shop bought Spanish tortilla. Pack of the Spanish tapas things with olives, cheese and nuts and meats. Crusty bread. That’s one of my finest quick meals!

Salmon fillet baked in a foil parcel with soy sauce lemon juice and black pepper. Takes 20 mins, time to peel and chop carrots and boil or steam them with broccoli, curly kale, green beans. Microwave rice or bread and butter if you need carbs.

+1 for frozen Gyoza. But I prefer them fried not microwaved.

Whilst they are frying I cook frozen edemame beans and chuck some carrot and cabbage through the grater and make an Asian dressing. Yum.

Also any meat or fish fillet, pan fried, plus some kind of veg and microwave rice is crazy easy and possibilities are endless. Gets expensive that tho.

M&S do a couple of versions of cheese rarebit in a ceramic dish - I put that in the oven with a part baked bread roll (and if I'm feeling gourmet, I add a handful of chopped scallions over the top once it's cooked). That used to be my "go to" with a glass of white wine when DH was away once I'd got DD to bed - then she learned about it and uses them up in the afternoons after school!!

Lidl bacon lardons (they come in a double pack and last weeks) tossed into a dry pan (plenty of fat comes off the bacon), add a sliced onion and some sliced mushrooms. Mix an egg with some cream if you want sauce, and add to the pan once turned off the heat - although just a scattering of grated parmesan can be enough.. Serve with some fresh pasta which only needs 3 minutes to cook.

I freeze any bits of leftover cauliflower cheese - and then reheat those in the oven while cooking a lamb chop (throw it on a baking tray for 15 minutes - put a sprig of rosemary underneath it if feeling gourmet!) and roasting a couple of baby potatoes (halved) or a regular potato chopped into 1-2cm dice (if I have thought ahead enough, I will peel/slice potato in advance (night before or in the morning), whether regular or baby, and throw into a Ziploc bag with olive oil, pepper and some garlic granules).

If no cauli cheese, this can work just as well with a couple of cherry tomatoes in the baking tray for last 10 minutes, or some diced mediteranean veggies (onion, garlic, pepper, tomatoes, mushrooms, courgette etc) - these can also be diced and marinating in advance, and frozen both before and after cooking (useful to throw into a baking tray straight from frozen, or to defrost the cooked leftovers and use as the basis of a pasta sauce with just some tomato sauce or even just passatta).

Another nice one, not huge effort for one, is the baby roast potatoes or diced potatoes with feta stuffed chicken. Under the skin of a part boned chicken breast, put a pinch of thyme leaves and about 75-100g chunk of feta cheese - season on top with salt and pepper and a drizzle olive oil. Roast for 40 minutes (plenty of time for a decent G&T while folding socks!). I usually have diced med veg with that too.

Into a piece of tinfoil, put a salmon darne, about a quarter sliced onion, thinly sliced carrots, and some cubed potatoes. Season, add a splash of white wine (or water), seal your tinfoil packet and bake for 20 minutes.

Stop en route home for nice fresh crusty bread (loaf, baguette or just a decent roll), 2 nice slices of ham from deli counter and small tub of proper coleslaw and make a decent sandwich. (Some sundried tomato pesto and a good strong cheddar in place of the coleslaw is also great - and can be toasted to melt the cheese).

Tub of hummus and either breadsticks or carrot sticks (HM or packet bought for "steaming"). Or small tub pate with crackers.
Handful of olives and a couple of slices of parma ham or some nice salami, cherry tomatoes, maybe a slice of cheese and some crackers etc. M&S do small portion packs of nice meats that live weeks in the fridge. Various combinations of nice cold nibbly things can work well, and be varied enough over time to not get bored.

A lamb shank put in a low temp oven (150 degrees) on the timer for a couple of hours before you get home, maybe with a jacket potato sitting with it, can be an effortless option.

Omelette with whatever meat, cheese and veg is in the fridge.

Spaghetti with vegetables (leeks, spinach, mushrooms, tomatoes and red onions are good), sometimes chuck in bacon or chicken, stir through red pesto.

Linguine with parma ham. Lightly fry diced onions and garlic, stir in creme fraiche, lemon juice, torn parma ham, grated parmesan and a few basil leaves. Serve with a pile of rocket.

All really quick, cheap and easy.
