AIBU to ask what you'd make for dinner with leftover chicken?

I roasted a chicken for what turned out to be a rather bland chicken salad last night, what can I do with the rest of the chicken for tea tonight? I have some wraps in the fridge, maybe something with that? Have about a fiver to spend.

Quesadillas? You can fancy the chicken up with seasoning and add whatever odds and sods you’ve got in the fridge.

What other ingredients do you have? If you have onion, garlic, ginger, chili, coconut milk you could do a Thai curry. Or if you have mushrooms you could make chicken and mushrooms in a white sauce, or a pie. Or if you have tinned tomatoes and peppers, maybe some other veg, you could make a ratatouille sauce and add the chicken

Stir-fry? You can usually get a bag of pre-cut veggies for under £2. Box of eggs = £1 and bag of rice = £1 so you can make egg fried rice to go with it.

Sorry I thought I’d found the recipe it’s like this but with the chicken (I usually boil the bones etc to make the stock)

Barbecue sauce, grated cheese, leafy salad, in the wraps.

Or layer up the wraps in a big stack, sprinkling chopped chicken, sweetcorn, kidney beans, cheese, tomato salsa and jalapeños chillies between the layers. Bake for about 20mins to heat it through. Serve in slices like a cake.

Get some leeks, ham hock, a tin of condensed chicken soup and a packet of pastry to make chicken, ham & leek pie.

I often make a chicken risotto, lovely if you have a little white wine and herbs to go in it.

Fry up some onion and garlic, add a carton of passata and the chopped up chicken, heat through then bake it in a dish with a ball of mozzarella torn over the top. Serve with crusty bread.

have you any spuds? Chicken & chips with salad or make wrap pizzas - tomato puree on the base then top with chicken, cheese etc etc

Got any veg in the fridge/freezer? Homemade chicken fried rice always goes down well here. Rice, peas, sweetcorn and whatever other veg I have lying around, couple of eggs, left over chicken and then whatever spices I throw in that day.

Curry... you can get a jar of jalfrezi sauce for £1, an onion for 10p and a pack of peppers for 90p. We do it every Monday after our chicken Sunday roast 😋

In addition to what has been said:-

Chicken and mushroom pie - I usually use ready made puff pastry, a tin of condensed cream of mushroom soup and fried mushrooms.

Sweet and sour chicken (Its really easy to make S&S sauce from ketchup, vinegar and brown sugar)

Coronation chicken
