What are your go-to quick and easy meals?

Not jacket potatoes or eggs.

We are stuck in a reheated, batch cooked rut, frozen pizza etc and need some new ideas please.

Stir fry with any meat / prawns / fish - microwave pack of rice or noodles dont take long to cook - or get straight to wok style ones
Any dried pasta with a simple tomato sauce (chopped cherry toms, red onion, garlic in olive oil, splash of balsamic and some basil - top with cheese) serve with salad and garlic bread?
Premade filled fresh ravioli / tortellini with tomato sauce or just tossed in butter and black pepper
Fajitas are really quick if the chicken is sliced thin enough

Fish cooks really quickly so make a tomato sauce with some garlic, then put some frozen fish fillets or seafood and olives on top for about 5 mins and simmer. great with chunky bread.

Had a lovely Saag Paneer last night - from Jamie's 5 ingredients book but I tweaked it a bit.

Fry onion, cashew nuts and cubed paneer with rogan josh curry paste for about 10 minutes and then add red wine vinegar and a bag of spinach. It's ready when the spinach has wilted. We had it with flat breads. Whole meal took about 5 minutes to make including prep!

5 bean chilli. Tin of Heinz mixed beans, cumin, coriander, tomato paste, sweetener, 1/2 tin of chopped tomato's.

Either nuke a pack of lime and coriander rice or boil.

takes about 15 minutes and has 2-3 of your five a day in.

Most of my meals are 20 mins or less ..
I often buy pre cooked chicken which is about the same cost as fresh raw chicken( saves time )
Thai green curry , basically paste and coconut milk , cook rice
Chicken curry , curry powder , Campbell's chicken Soup , peas , cook rice .
Sausage and mash
Finest lasagne and salad
Spaghetti , cookmince , add veg , Worcestershire sauce , herbs ,tinned tomatoes , cook pasta ..
Just a few .

Rice on to boil. Chop, Mushrooms, pepper, onion, spinach, tomatoes, garlic (or use frozen/pre-done). Lightly fry the veg, add the tomatoes, a can of chick peas and stir in Curry sauce. Heat for about ten mins. Serve with rice.

I’ve been doing a recipe that fries packet gnocchi rather than boiling them - good as a variation on pasta, could go with a creamy or a tomatoey sauce.

Tandoori salmon on pita with natural yoghurt, cucumber and chilli. It's a Jamie Oliver recipe and is so quick and tasty it's a weekly meal in our home.

Just discovered the secret to a bland veggie meal - basmati rice. I used to struggle like many people with the blandness, but I've just eaten chicken, veg and basmati rice for lunch and it was bloody lovely. Batch cook chicken to last a few days and the veg and rice done in the microwave.

Carbonara is just about the quickest meal I can make but I'm trying to eat veggie/vegan now and haven't found a good alternative!

Filet of baked salmon, fluffy boiled potatoes tossed in butter and green beans

Salads - search online and there are some really good ones that aren't dull.

Gnocchi and homemade pesto.

Garlic mushrooms on toast

Tinned tomatoes on toast

Frittata using leftover veg

Make a bolognese at the start of the week and then add chili and kidney beans the next night

Pre made batch soups - warm up

Lamb chops under the grill with a cous cous salad. Yoghurt-mint dollop on the side.

Burgers take only 20 mins from scratch. Add salad

Keep your left over broccoli stalks then chop 'em up and boil them in some stock until cooked. Put through food processor and add cream.

Yummy thai fishcake from aldi served on fresh spinach salad or cooked spinach with a drizzle of sriracha.
Fish finger wrap with lettuce and mayonnaise
Pasta pesto with peas and bacon bits and splash of cream. Chopped or cooked spinach works too.
Quesadilla: a wrap with sundried tomato paste, pesto, grated cheese (and snything else you fancy) topped with another wrap and baked in the oven til almost crispy. Sliced like pizza.
Bolognese topped with grated cheese wrapped in a wrap like a parcel, baked til crispy (oh, wraps seem to feature heavily hereBlush)
Puttanesca sauce with pasta (fried onion, garlic and chilli flakes with chopped black olives, capers, fresh parsley a splash of wine and some Olive oil)
Tin of beans heated with a dollop of Pataks curry paste, halved cherry tomatoes once heated through added, served on naan bread and with chopped coriander over.

Use frozen rice rather than boiling it yourself. Takes 3 minutes and always comes out perfectly. :)

I like rice, veg and chicken or fish. Add the sauce of your choice and you have a quick tasty meal.

Would you stretch to a longer time if minimal effort?

Breaded chicken fillet (fresh or frozen). Cover with half jar ragu (I like the sweet pepper or med veg ragu) and top with mozzarella (or any cheese in an emergency). Oven 30 mins (maybe 20 if fresh chicken fillet, I dare say you know your oven). Sounds too simple but it's bloody gorgeous.
