DH wasn't going to brown the mince first....

AIBU or is DH.

I left him to make bolognaise tonight and came down as he was pouring chopped tomatoes into a pan in which he had browned some onion, aubergine and carrot....I looked at him and said what about the mince and he said it will be fine. I said you will need to brown it in another pan first and he said no I don't it will be fine.

I insisted that he brown it first in another frying pan before adding it to the chopped tomatoes and veg....

Was I being unreasonable...does anyone not brown the mince first?

It's the fat that actually tastes of something when it renders. If you brown it you can then de-glaze the pan and get the lovely brown bits in your sauce.

Assuming you are using decent mince anyway which isn't full of really crappy, fatty bits of meat.

i brown it to pour off excess fat, but that's all.

i don't think it makes a difference to the taste really. it's just the fat reduction that i prefer.

Browning the mince helps to caramelise the natural sugars in the meat and therefore enhances the flavour. That's why you should brown it properly, not just cook it until the colour changes from pink to grey.

YABU about the separate pan but not about browning it first. I always brown it then add everything else.

i brown the mince and so does dp, and then drain of any excess fat.

i am sorry but [boak] at rinsing the mince, particularly with warm water :v

YANBU to want the minse browned.

YABU to be hovering, looking over his shoulder, unless he's asked for advice...you'd be wearing the minceif you did that to me on a bad day Grin

My friend's mum cooks mince for 15 mins in boiling water before rinsing and adding to browned onions etc!

Well I've always been a browned mincer. Apart from anything else, you can infuse it with herbs and stuff before sloshing the toms in. Not browning it is somehow nakedly wrong.
