I made a nice one today of hummus, tomatoes, spinach leaves and balsamic glaze on sourdough but looking for inspiration

can be vegetarian - just no eggs or coriander!

tahini, miso, sauerkraut, arugula

Honey and sliced banana on granary bread.

I used to do crostini for bbqs that was toasted baguette slice, brie, half a walnut and a drizzle of honey. That would work as a sandwich with some rocket leaves.
