Please give me your most delicious vegetarian sandwich ideas

I made a nice one today of hummus, tomatoes, spinach leaves and balsamic glaze on sourdough but looking for inspiration

can be vegetarian - just no eggs or coriander!

Today’s sandwich of choice …

Wensleydale with pink choice tomatoes and balsamic glaze on seeded sourdough. Salt and apple cider crisps on the side

very good. Wensleydale is an underrated cheese

I recently recommended this on another sandwich thread.
Beetroot hummus, more beetroot, rocket and horseradish or wasabi

Crumbled falafel, hummus, grated carrot, fresh mint leaves
Crumbled falafel, roasted red pepper, pickled chilli
Cucumber and salad cream

Crusty petit pain or small baguette. Slice into but not through and scoop out the bread. Fill with roasted vegetables, some of the oil they were roasted in, salt and pepper. Wrap in foil, paper or cling film and leave for a few hours so everything soaks into the crusty bread. Unwrap and enjoy.

Mashed chickpeas, mayo and finely chopped celery for crunch and serve with salad leaves*.
*Swap for finely shredded seaweed sheets for a fake-tuna mayo taste, add curry spices/ raisins for a coronation chickpea filling

Love this thread.

My favourite when I am very pushed for time is peanut butter (the sort you have to stir to mix the oil back in), spicy mango chutney and lettuce/spinach/something green and leafy.

I like it in a wholemeal tortilla but see no reason why it wouldn't work as a sandwich, too!

The best sandwich I ever had was so simple ... Fresh baguette, olive oil, mozzarella, black pepper and sliced black olives. Wonderful. It may have tasted better for having been made and consumed in Carcassonne however.

On an Easyjet flight once I had a toasted sandwich with boursin, roasted red pepper and spinach. It was really good and hit all the spots.

Today i had a wrap made with turmeric spiced lentils, lime pickle, spinach and curried chickpeas. It came from Tesco and was really quite okay.

Do you eat eggs? If so a thin omelette topped generously with kim chi on granary would be my favourite.

I also like hummus and grated carrot (I often mix the grated carrot with some fresh chopped herbs eg coriander, basil or mint).

Great suggestions already…I think you can elevate the basic sandwich variations with slightly better quality but without needing zillions of different ingredients each week
Whatever you consider nice/fresh/granary/part baked breads
vary your cheese purchases, get strong ones or interesting occasional ones like applewood, Boursin, black bomber, vintage Red Leicester, aged gouda, Cheshire
real butter
crisp iceberg
If at home…veggie sausage baguette

I love a really strong feta and tasty tomato sandwich - and fresh granary bread

or peanut butter with real butter and a pinch of salt

If you get sick of cheese you can make a nice filling by mshing some chickpeas with whatever you fancy. I added cottage cheese, jalapenos, spring onion. Garlic powder. Bit of chili. Yum

One from the distant depths of the last century (sob), as prepared in a buddhist centre cafe.

Seeded bread (gluten free optional)
Hummus
Grated carrot
Assorted mini sprouted seeds
Finely chopped tomato (so it didn't drip or fall out of the sandwich).

Used to have one of those, a soya yoghurt and a bottle of chilled Aqua Libra in the days when that tasted of melon and herbs instead of bitterness and sorrow, every lunchtime when everybody else was going across the road to the pub for a cooked meal and two pints.

What about melted brie, chilli jam, and rocket on toasted Tiger bread? 🌶

There's always some feta with olives and roast red peppers with balsamic glaze on open-toasted bagels 🥯

Or some fakon, rocket and sun dried tomatoes with salad cream on toasted tiger bread (basically a veggie style BLT?) 🥓

ETA: what about a naughty sweet-toothed option?
Toasted bagels with Nutella on one side and peanut butter on the other, and could always have chopped banana or strawberry in the middle 🤤
