What's for dinner?

I have completely lost the abiliity to meal plan due to basic stress and meal-planning fatigue.

So I went online to a relatively local small Boarding school and printed out their dinner menus (they do a 6 week cycle) and now am just following those.

So tonight we are having:

linguine with basil pesto, prawns and peas, served with tomato and black olive flat breads followed by a triple chocolate cheesecake and red grapes.

Tomorrow will be blackened cajun salmon with rice, black beans and a pineapple chilli salsa followed by strawberry trifles.

I am expecting that for quite a few meals I will have enough to freeze portions so i am hoping to basically not have to think about what to cook for a good 3 months.

(I am buying the puddings, just to say. Perhaps the school makes their own, but I'm just not going to right now).

That's a very good idea.

It's pasta with tomato sauce and green lentils here, leeks in some form, and cheese.

Tonight peri peri chicken, sweet potato fries and minted peas, the rest of the week is flatbread pizzas, chilli con carne with rice, salmon with sun-dried tomato pasta and sausage, mash and green beans

I have no idea. I missed my connecting train home from work so I’m currently in the pub across the road from the station with a large glass of wine. I’m tempted to pick up a bottle when I get home and just have a liquid tea. Can’t really be bothered cooking just for myself and Tuesday is dance for dd so she’ll have already eaten by the time I get home and dh does the dance run on Tuesdays (I do Thursdays). The more I type the more I’m thinking this is a good idea. I might pick up a share bag of crisps and eat them alongside it…

I'm having a boring ready meal because I'm dieting and it's the best way (for me) to achieve proper portion control. So it's beef bourguinon with cabbage. DH is having spaghetti bolognese. Not a ready meal, something I made previously and put in the freezer. I don't make him eat what I eat.

Halloumi cooked with plum tomatoes, tinned sweetcorn and frozen peas and served with basmati rice.
Strawberries and watermelon for pudding.

Salmon with garlic, ginger and a squeeze of lime in the air fryer with garlic sweet potato chunks from the freezer and tenderstem broccoli with some aioli on the side.

Tomorrow same, Thursday prawn curry, Friday chilli con carne, Saturday Enchiladas, Sunday take away for my birthday, Monday chicken parmigiana with rigatoni in tomato and vodka sauce.
some meals for next week - sausage and spinach pasta bake, prawn and avocado wrap, chorizo and butternut squash risotto, steak and blue cheese ciabatta.
I love getting ideas from these threads.

Dh is away with dc and I have realised two things: I would be veggie if I lived alone and my food bill would be so much more reasonable.

Chicken pie with new potatoes and asparagus. made it at lunch time using a new covent garden fresh veg soup mixed with cooked roast chicken pieces, onion, oregano and mustard. I've given up on "proper" cooking mid week as I was getting so stressed trying to find the time between work, 2 small kids, dog walks and sleeps!

Just had Spanish Chicken and Rice.Recipe from Kitchen Sanctuary which I get a lot of my recipes from. It was very tasty.

It’s just me and my 18yo home tonight as DH is working and 22yo is away at a gig so I bought one of those tortellini packs and a tub of white sauce to go with it. 18yo is autistic so dinners can be hard but they absolutely love tortellini as long as there isn’t any tomato in it.

The DCs loved their linguine yesterday so I am repeating it at their request.

It's a great menu with a vegetarian option daily as well so I'm just planning on cycling through it.

I used to be quite obsessed with school meals around the globe @Sunseansandandautism and when the DCs were tiny used some nursery menus from France I found online. Some of those were brilliant. Things like a starter of grated carrots then chicken in mustard sauce with sauteed potatos followed by cheese and fruit. I don't know why I've left it so long to go back to the technique to be honest- I'm so so sick of the mental load of planning dinners!!!!

I've really started to love a flatbread pizza. Usually a go-to weekend lunch now.
