What's for dinner?

I have completely lost the abiliity to meal plan due to basic stress and meal-planning fatigue.

So I went online to a relatively local small Boarding school and printed out their dinner menus (they do a 6 week cycle) and now am just following those.

So tonight we are having:

linguine with basil pesto, prawns and peas, served with tomato and black olive flat breads followed by a triple chocolate cheesecake and red grapes.

Tomorrow will be blackened cajun salmon with rice, black beans and a pineapple chilli salsa followed by strawberry trifles.

I am expecting that for quite a few meals I will have enough to freeze portions so i am hoping to basically not have to think about what to cook for a good 3 months.

My approximation of cassoulet. Pan fry chicken legs, sliced garlic, sliced chorizo and chopped onion. When browned/softened and with the chorizo colour running, add a tin of chopped tomatoes and a drained can of cannelini beans.

Cover & simmer gently for an hour.

Take off the heat, remove the chicken skin and bones, break up the meat, and serve with steamed brocolli.

Low effort, easy and good for cool evenings.

Love the inspiration behind your menu plan, very novel!!
We had lahmacun last night, a sort of Turkish (I think?! Sorry to any Turkish people I might offend!) thin bread base topped with a spicy lamb mince ‘paste’ - it’s absolutely delicious 🤤
tonight we might have a bbq.
Fortunately dh is the cook and he loves cooking, making bread and generally is quite good at making sure we eat a really wide variety of foods, keeps it interesting for everyone.
if I were in charge of feeding everyone there would be plenty of x on toast type meals because I hate cooking with a passion.

DH is at a conference so I've got Tesco microwave chicken tikka masala for one. Its genuinely one of my favourite teas.

Tonight it will be baked sweet potato with fired onions and chorizo with a salad - I add butter and it’s sooooo good!
Tomorrow shepherds pie.
i don’t like cook for just myself - I’m on my own now DD has gone back to uni, but spent the weekend at my son’s and we had ribs with Chinese spices, fried rice and crushed cucumber salad - delish! Next night we had lamb koftas with wedges and salad. Best of all my son cooked both dinners!

Tonight I'm going to have a chicken korma bought readymade this morning (I usually like to eat things I have cooked myself but I'm dieting so buying ready meals for portion control). Except I'm NOT going to have a chicken korma, I'm going to have HALF a chicken korma because DH misread the calorie count (I didn't have my specs) and it's nearly twice as I usually allow myself. So half a korma with broccoli instead of rice. I'm not thrilled....

The DCs loved their linguine yesterday so I am repeating it at their request.

It's a great menu with a vegetarian option daily as well so I'm just planning on cycling through it.

I used to be quite obsessed with school meals around the globe @Sunseansandandautism and when the DCs were tiny used some nursery menus from France I found online. Some of those were brilliant. Things like a starter of grated carrots then chicken in mustard sauce with sauteed potatos followed by cheese and fruit. I don't know why I've left it so long to go back to the technique to be honest- I'm so so sick of the mental load of planning dinners!!!!

It is the worst household task.

I had the other half of my tomato lentil and leek pasta. It was very nice, I used Lidl tomato and mascarpone sauce and a tin of green lentils.

We had Aldi wagyu burgers (honestly the best burgers we've ever had, home or away!) in a brioche burger bun with melted cheese and a large slice of a beef tomato (also Aldi). Dressings included caramelised onion chutney and some garlic burger sauce. They were scrummy and messy, real lick your fingers stuff. Oh and a few French fries 🍟

I just had a macaroni pie tonight. I did have much healthier options for breakfast and lunch and just needed some good comfort food.

Wrapped up some chicken breasts in foil with a packet of gyros seasoning sprinkled in, cooked in oven. Had that sliced up over a salad of tomatoes, peppers, avocado, grated carrot and a bit of lettuce. Balsamic glaze and mayo.
