Easy veggie starter Christmas?

Any ideas for a light, make ahead or quick starter? Not soup. If it could be adapted for meat eaters, bonus points!

We usually have arancini , easy to chuck in the oven or air fryer for a few mins to warm up

They look nice, although weirdly I struggle to cook leeks properly. Perhaps they would be better overcooked in this than my usual crunchy version!

Egg mayonnaise - on a bed of lettuce with paprika sprinkled on top. My favourite!

Goats cheese, beetroot, walnut, rocket with a drizzle of olivie, oil, honey and balsamic - delicious and light and leaves plenty of room for more courses

The vital question is, what's the main course? No point suggesting starters that won't go with it, or will.duplicate it.
