I'm stuck in a rut with meals. I used to cook a lot of pasta but stopped when trying to lose weight
Craving a decent pasta dish so please share recipes. I prefer a tomato rather than creamy base

Sausage pasta. The easiest thing to make. Cook the sausages (cut up into chunks) until fully browned (8-10 mins), then add and cook down some onions and garlic, once they are cooked down add a tin of chopped tomatoes and leave to simmer for 10 minutes. Once full cooked add some chilli powder to taste. Then add the pasta and stir through.

To mix it up I sometimes add peppers or peas etc.... to get some more veg in it.

Not tomato but I love this one and it's v easy.

Get a tin of anchovies in olive oil. Put oil in pan, fry some garlic....add some finely chopped broccoli...cook for a bit and add a ladle of water from the pasta while it's boiling. Usually use penne but doesn't matter. Add well chopped anchovies and melt those in . Toss pasta in the sauce. Season well with black pepper and parmesan if you like it, to serve.

One of my favourites is a tomato based steak pasta.

I marinate steak strips with olive oil, garlic, salt, pepper and a little paprika. Sear them quickly in a hot pan so they stay tender and set aside.

In the same pan, sauté garlic and chilli flakes, add good quality chopped tomatoes (or passata), a pinch of sugar, salt, black pepper and Italian herbs. Let it simmer until slightly thickened.

Toss in cooked pasta (I like penne or tagliatelle), add a splash of pasta water, then mix the steak back in. Finish with fresh basil and a sprinkle of parmesan. It’s rich and satisfying but still tomato-forward rather than creamy😋

Lazy Pasta.

When I'm home alone I love to mix spaghetti or tagliatelle with some of the deli pots from M&S. So a marinated prawns in some kind or oil, or sun dried tomato and mozzarella balls, artichokes and olives or a mix of bits. Then a handful of spinach, all just tossed through cooked pasta. Lazy and lush!

Crab meat with cherry tomato garlic and chili lots of good olive oil.

I had the best courgette one in a pub once. Courgette ribbons lightly fried with garlic, lemon juice feta and toasted pine nuts.

Yesterday we had half a tub of cream cheese and chive mixed through spaghetti with smoked salmon and raw chopped chili. Delish.

I like the mushroom filled pasta with olive oil and parmesan and fresh basil. That's really easy!

There's one with broccoli and walnut pesto that's doing the rounds at the mo. Supposed to be really nice.

I like it with just garlic, good olive oil and chili and parsley too. Plus parmesan obviously.

Carbonara is so easy to make but I'm not a fan of it unfortunately.

Aglio, olio, peperoncino here too
OR chuck a load of cherry tomatoes in the oven with a drizzle of olive oil, lots of garlic and salt. Cook until soft but browned, mash up a bit and throw in cooked pasta. Top with blobs of mozzarella, fresh basil (or stir through a spoonful of pesto) and black pepper. Splash of balsamic / balsamic glaze and rocket to serve. Can also add olives and swap the mozzarella for whatever cheese. If you use lazy garlic, no chopping at all.

Cauli/Macaroni cheese. Plenty of both, lots of cheese in the sauce, plus S&P and a good dollop of English mustard, cauliflower simmered for 3 minutes max, so not soggy/overcooked, then very well drained.

Mix well, pile into ovenproof dish, breadcrumbs and extra cheese on top, whack under the grill. Always goes down well. I once made it for unexpected guests when I had enough of everything but not much else. There wasn’t a scrap left.

I always include any fresh enough green leaves with the cauliflower, BTW.

Can also make 50/50 with broccoli.

Two favourites: number 1 is sausage pasta (either proper Italian sausage meat that already contains fennel, or with normal basic sausages and some fennel seeds, depending on what’s in the fridge) with a fresh tomato sauce and some mascarpone stirred in. Number 2 is student pasta surprise - penne, stir-fried with onions, leeks, pancetta or bacon lardons, peppers and mushroom, with cheese on it.
