I'm stuck in a rut with meals. I used to cook a lot of pasta but stopped when trying to lose weight
Craving a decent pasta dish so please share recipes. I prefer a tomato rather than creamy base

Anything creamy, cream and cheese with black pepper, or broccoli and cream or my favorite broccoli, oil, anchovy, chilli flakes and then parmesan or pecorino on top

love this. I use normal sausage and miss out the rosemary because I never have it. I also never have wine so use martini Rosso vermouth which I also use for bolognese.

non tomato one - gently fry down a chopped onion and a few cloves of garlic in a decent amount of olive oil in a pan with the lid on for 10+ minutes until it goes soft and mushy. Add a tin of anchovies and cook for a further 10 mins. Add ground pepper and stir into pasta. If you cba to add some shredded white cabbage to the pasta water for the last few minutes it’s even better. I’m aware this one sounds horrible but it’s gorgeous.

We make chicken fajitas, but instead of putting it in wraps or anything I make a load of pasta, mix it all together and add a tub of double cream 🤤 delicious x

It’s not tomato based, I would describe it as creamy as opposed to tomato based

prawns with tagliatelli, chilli flakes, lemon, anything goes, crème fraiche

also another recipe i use is courgettes leaks, crème fraiche, and i roast tomatoes to put on top,

anything with roast tomatoes, peppers, perhaps halloumi , dont forget the garlic.

What about a pesto based dish? Pasta, pesto with fresh basil and cherry toms stirred through?

I have moved away from a sauce to more of a dressing. So capers, spinach, peas, baby broad beans, Parmesan, cherry tomatoes, or various salad sprinklings- onion, bacon, etc.

Tomato - just cook down some onions very slowly with good olive oil, adding in garlic half way, around 20 - 30 mins cooking time, then add tin of chopped toms with oregano, perhaps put some olives in if you are keen, cook down for another half hour at least, you want it thick and unctuous

You can add cheese in it or other veg but you want to let the toms shine

One of my favourites is an easy red pesto sausage pasta. Just grill or airfry some decent sausages and chop. The sauce is onion, garlic, red pepper with a tin of tomatoes and a good dollop of red pesto. Add your cooked pasta. I normally sprinkle on some cheddar or parmesan.

We do a sort of arribiata with chorizo and aubergine. Soften onion in a bit of oil. Once soft, increase heat and add chopped up chorizo (i use the rings normally but irs even better with proper cooking saisages). Fry until crispy. Remove to a plate. Fry chunks of aubergine in remaining oil with some salt until browned on all sides.

Return onion and chorizo to the pan. Add some.garlic and chilli as per your preference. But of.red wine vinegar and tinned tomatoes plus a bit of water- play this by ear. Add additional smoked paprika and some.dried oregano and a spoonful of sugar.

Simmer for about 20 minutes stirring occasionally.

I taste at the end. Sometimes I leave it as it is. Sometimes a stir in a couple.of spoons of creme.fraice or cream cheese or something ro give it a bit of softness.

Serve with feta cheese.

Puttanesca. A lovely punchy tomato sauce with olives and capers. Don’t be put off by the addition of anchovies. They disappear into the sauce but add real flavour.

I think this is the closest recipe to a tomato pasta dish I cook. Minus the chilli flakes, and I'd add in some red/yellow peppers, or roasted peppers from a jar, if I have.

The sausage pasta is often do with a good vegetarian sausage for a change (i also think they keep there shape better.
The chorizo pasta often gets left over chicken added to it.
Both freeze well so i usually double and freeze.

Amatriciana, but lazy.

Fry some cubes of pancetta, then scoop out and use the fat to soften some sliced onion. Tin of crushed tomatoes, a pinch of chilli flakes and season well. Simmer while you cook the pasta, then combine the two. Apply to face.

It’s not tomato based, but I adapted an M&S ready meal I used to take to my (fussy eater!) elderly mother on my after-work visits 60 miles away.

It was called salmon and broccoli pasta, in a white sauce.

I use a tin of salmon (drained, flaked and de skinned/boned) for me and dh, and add a slug of white wine plus a little grated cheese, to the sauce. Penne and al dente broccoli florets cooked separately and all mixed together.
Very tasty.
