Help me up my sandwich game!

I like a nice sandwich, and either make my own bread or buy as decent as possible.

I use the typical fillings, so might have tuna, regular salad, egg/avocado toasts, parma ham and pickle, etc.

I would love to up my game a bit and find new and interesting and especially healthy ways to make a sandwich or toastie!
Regular salad can get boring, so would love some ideas to incorporate more tasty veggies that I might not have considered? Hot or cold ideas welcome!

My favourites are

smoked turkey, Leerdamer, red onion and iceberg lettuce. Decent white bread and proper butter.

Rare beef, rocket and horseradish

gqmmon and cheese toastie. The cheese has to be melted and gooey not just warm.

And cream cheese, ready salted crisps on crap white bread.

Roast veggies for a pasta dinner and make extra to load up with hummus and rocket

mozzarella, tomato and pesto

add diced red pepper or sweetcorn to your regular tuna

make creamy or non-creamy slaws to pile in with anything you fancy

This sounds like a very yummy mission, I hope you find plenty that you like!

Brie and very crispy bacon bits

goats cheese and roasted veg (any cheese and roasted veg really)

strong cheddar and diced celery

chicken with grilled courgettes (cut really thin and cooked on a frying pan or griddle till blistering - I make these for pasta and then use the leftovers)

The nicest. one I had this week was roast beef and a slice of Emmental cheese with grainy mustard in toasted ciabatta.

Avocado and smashed chickpea, chuck in some lime and coriander stirred in to the mixture. Toast your bread and away you go.

I am also quite liking red cabbage chopped into salads at the moment, or edamame beans and sweetcorn.

I am a vegetarian so try to get my protein in where I can.

I used to work in a deli/sandwich shop and became obsessed with homemade hummus and salad sandwiches on whole meal maybe some added roast peppers on a granary loaf. I ate it daily while I worked there over the summer

Prawns and egg mayo/boiled egg, with or without rocket lettuce. Sprinkle dill over for extra taste. Also works well with smoked salmon instead of prawns. On wholemeal or seeded bread.

Tuna and olives on wholemeal or sourdough bread.

Avocado and vine tomatoes with a dollop of olive oil and a pinch of salt, on sourdough bread.

Also...Walkers Ready Salted or Cheese & Onion with Dairylea instead of butter, on white bread.

I've been learning to make chutney and pickles, they're great in most sandwiches, or try some pesto sauce.

You mention toasties, I've recently started using wraps as I found not so doughyy as bread.

I had truffle brie on Friday but have been known to cheat and use flavoured cheese slices. I used a toastie bag at work

Inspired by this thread I am having a Jasons Roll with grilled baby peppers, thinly sliced courgette, sliced cherry tomatoes, mushrooms, basil, pine nuts.

All served warm on a bed of rocket, pesto, olive and Comte cheese OMGGGGGGG..

Loving these so much <3

What do you tend to pair with your eggs?
I often use avocado but only like egg sandwiches/toasts with garden cress and thinly sliced cucumber. My taste buds need to explore more ideas!

I really like those pitta bread pockets you can fill. I whack a huge salad with chorizo, feta cheese and olives inside, dash of mayonnaise or dressing and it is delicious. I treat myself to one every Friday for my lunch.

Grated raw carrot and / or beetroot with grated cheese.

Hummus & avocado in a toasted (cooled) wholemeal pitta with a drizzle of sweet chilli sauce and lots of air-fried spiced chickpeas for texture.

Mozzarella (or Bousin) , tomato & avocado with basil on slightly fancy bread 😅

If you're exercising, then I also like to use 2 x Lidl Protein Pancakes sandwiched together with a little peanut butter and lots of sliced banana 😋
