Help me up my sandwich game!

I like a nice sandwich, and either make my own bread or buy as decent as possible.

I use the typical fillings, so might have tuna, regular salad, egg/avocado toasts, parma ham and pickle, etc.

I would love to up my game a bit and find new and interesting and especially healthy ways to make a sandwich or toastie!
Regular salad can get boring, so would love some ideas to incorporate more tasty veggies that I might not have considered? Hot or cold ideas welcome!

What do you tend to pair with your eggs?
I often use avocado but only like egg sandwiches/toasts with garden cress and thinly sliced cucumber. My taste buds need to explore more ideas!

My current fav is chicken, tarragon and grape.

Usually make with leftover chicken that I dice. Mix with mayo (and a bit of Greek yogurt if I have it to lighten it) add fresh tarragon (or dried if I’m out, but I love tarragons and just chop any leftover and freeze), bit of lemon juice or white wine vinegar and sliced white grapes. Season with salt and lots of black pepper. The mix keeps well in a container and gets better the next day

Will often add a load of rocket/watercress.

Following for inspiration! But I'll add one I just had a festival- halloumi, red cabbage, carrot, rocket and mint yoghurt dressing. All encased in a herby flatbread - was yum!

To add I’ll often do quesadillas for a lunch snack, much faster than a toastie and healthier.

Just take a flour wrap and cover with grated ham and a mild melty cheese ( or cheese and jalapeños). Slap another wrap on top and pop in a dry frying pan on a medium heat until the cheese melts and the wrap is golden. Flip over. Takes 5 mins in total so really quick and no washing up from the dry pan.

When done use scissors to cut into sixes or quarters.

Also nice with low moisture mozzarella and chilli jam.

In colder weather the kids love ham/cheese ones to dunk in tomato soup.

Edit: grated cheese not ham!

Add fruit! That’s what I do - peaches or strawberry in a cheese sandwich, plum with chicken or turkey, apple slices with pork.
