Anyone doing an MN massive salad?
Here’s mine. Kept the broad beans separate because they’re a bit old and I’m the only one who likes the old ones.

It was for two of us! Not that much was it? For each person it was most of a little gem, an egg, 50g feta, 5 toms, a few olives, maybe 3 new potatoes and a courgette. always looks more sliced up, that’s the point really. We ended up putting a box of it in the fridge.

We had:
Rocket
Pouch of microwaved brown rice
Ready-poached salmon fillets, flaked
Edamame beans (defrosted from frozen)
Topped with:
A home-made miso dressing (miso, tahini, honey, ACV, olive oil, ginger, garlic - plus water to thin)
Fresh coriander
Black sesame seeds

No cooking for me!

I had my massive salad for lunch, so I'm only having an ordinary salad this evening.

No dressing, croutons or anything in my massive salad. Lettuce, onion, peppers, apple, seeds, sweetcorn and a little bit of cheese. But there is a LOT of it!

Not complicated! 2 courgettes sliced lengthways and done on the griddle with lemon juice salt and pepper; 100g of feta diced (I’d probably crumble it next time); 2 Little gem lettuces sliced up in strips, about 6 inches of cucumber diced, 10 baby plum tomatoes quartered, black olives halved; two hard boiled eggs sliced (I have an egg slicer which I’ll take any excuse to use); about 6 decent sized new potatoes diced and steamed. Not planned that much, more what we had plus stopping when I’d had enough. Dressing of oil, red wine vinegar, lemon juice, Dijon mustard and a little honey.

I had an absolutely UNREAL salad for dinner, one of my best ever! Watermelon, green beans, halloumi, prawns marinated in garlic/ lemon juice/ paprika, rocket, and lightly pickled red onion, with a honey/ balsamic/ lemon juice (and a tiny squeeze of chilli jam) dressing. Delicious!

This looks absolutely lush. Will try it this week 😍

I love salad but apart from Greek salad am not very good at making them. Ideas very welcome.
