Anyone doing an MN massive salad?
Here’s mine. Kept the broad beans separate because they’re a bit old and I’m the only one who likes the old ones.

Someone will be along to say that it would feed their family of 6 for a week !
Neighbours have invited us for a BBQ so I am taking a MASSIVE bowl of salad .

It would feed a large family, because it needs other items with it.
I regard salad is an accompaniment to a meal - a substitute for cooked veg.

We’re having a nice seasonal bowl of pasta. Although we’ve had salads all week so far. A sardine one with tomatoes and fresh chilli was my favourite.

Why don’t you just take the broad beans out of the tough casing OP? I’m sure the lovely green beans inside will be delicious for everyone.

On another thread someone linked to this site within the last day or two. This is similar to salads I remember from my Scottish childhood. Contemplating making a pared down version for my lunch tomorrow (nobody else here likes that kind of thing, fools that they are!) Yum!

we aren’t having a massive salad we’re having steaks on the bbq but not until much later on, we are all just relaxing at the moment! There will definitely BE salad on the side though.

Ours was lettuce, cucumber, peppers, tomatoes, avocado, chicken, boiled egg,lardons, blue cheese and cashews…delish!

Very similar to the salads of my Scottish childhood too, my mum would add mandarin segments (from a tin) and occasionally chips!

The salads I eat nowadays are still pretty much the same, I don’t like mayonnaise, salad cream or coleslaw, so they consist of

Plum or Cherry Tomatoes
Chopped Peppers
Beetroot
Boiled Eggs
Cucumber
Ham
Chopped Onions

DD has the same except she has mayonnaise with hers.

Fairly ordinary salad with mixed seeds sprinkled over. Coleslaw of course. Salmon. (DS had sausage roll as he doesn’t like fish)
Really enjoyed it and minimal effort.

I had an absolutely UNREAL salad for dinner, one of my best ever! Watermelon, green beans, halloumi, prawns marinated in garlic/ lemon juice/ paprika, rocket, and lightly pickled red onion, with a honey/ balsamic/ lemon juice (and a tiny squeeze of chilli jam) dressing. Delicious!

Tonight mine was a massive pasta salad, with chopped tomatoes, celery and peppers, olives and capers and prawns all in a Marie Rose mayonnaise.

No salad as I ran out of lettuce so chicken, broccoli and avocado. I’m going low carb (for the millionth time). I’ll take some salad ideas from here though.

This was the first evening this week I didn't have a salad (had pretendy 'pizza' on a gluten-free naan instead), but I have been enjoying potato-free potato salad, made with cauliflower florets zapped in the microwaved for about three minutes and dressed with lots of chopped fresh herbs and either mayonnaise or slightly sweet vinaigrette. I had a leftover portion of the mayo variant for lunch with added walnuts. V nice.

There's a bit of cauli left over for tomorrow, so if I make a 1970s style salmon mousse it can go with that.

(cooked salmon fillet or can of salmon; gelatine melted in hot water; Greek-style yogurt; lemon juice; tomato puree. Mix. Zap with stick blender until smooth. Pour into a lightly oiled bowl. Chill in the fridge while it sets)

Three smaller salads here - Waldorf (but without horrid walnuts), coleslaw, and a general mixed salad with lettuce, coriander, radishes, cucumber, olives and tomatoes.

I had couscous with roasted vegetables for lunch: mushrooms, peppers, red onion, cherry Tom’s and courgettes roasted with some spices and then dressed with lemon juice, mustard and vinegar. I added some kimchi which was delicious and have that with tuna or sardines or mackerel.

Had a variation of that every day this week at work. Will probably cook another batch tomorrow. I’m trying to avoid oil so salad dressing isn’t very exciting but the sharpness is lovely.

Squash and spinach croquettes
Smokey potato salad

love fresh light food in this weather!

You can’t be serious - as a main meal there is only a modest meal for a family
