I fell face first into a filthy but tasty burger delivery from Deliveroo as I’m PMSing and feeling like hell.

i want to make better decisions and get out of my weekly rut, so want ideas of what you had for dinner tonight!

if you also had a takeaway then that’s cool too some solidarity will also be good for my fragile mood 😅

I had a tofu stir fry.
Pack of stir fry mix, packet sauce......perfect option for a CBA but still healthy meal!
(Nothing wrong with the odd take away though when the mood strike you😀!).

Steamed salmon, rice noodles and stir fry veg with ginger and soy. Took about 15 mins to make and was lovely :)

Salmon noodles. Baked the salmon (with Chinese 5 spice chucked on it), wrapped up in foil in the oven for 25 mins.

Heated a bag of baby veg (sweetcorn, carrot and broccoli) in the microwave for 3 mins. Boiled dried egg noodles in water for 5 mins.

Mixed them altogether with a splash of soy sauce.

Tasty.

Pizza and chips (from the freezer)
would love a takeaway but going on holidays next week so can’t justify it

I'm going to be peak MN....an egg mayo salad with proscuitto, beetroot, olives, tomatoes, red onion, chives and leafy stuff. Only because it was that or pizza and I didn't fancy the pizza. I wouldn't mind a KFC tomorrow. I've a growing hankering for fried chicken. I probably should food shop soon, yawn.

Nothing yet. Just finished doing a supermarket shop all children in bed. Having a glass of wine and going to eat 2 slices toast with cheese 😬 which is generally what it is or a pizza or crisps or chocolate usually junk.

I’ve got no love of cooking myself dinner.

I’m the worst for my food habits - all the children eat exceptionally well but I just can’t eat at 6/7 pm when they do - it needs to be much later and then I can’t be bothered as I’m too tired 🤪 so resort to junk 😬

Oh it was totally thrown together but bloody delicious!

Red pepper, red onion, white onion, celery, carrot, (bottom of my fridge stuff that needs using up) packet of buffalo rice and sweet chilli sauce. Thrown together and stir fried with garlic olive oil. Took about 8 minutes all told.

Then a sliced kiwi, blueberries and raspberries with a vanilla and strawberry yogurt thrown on top.

Surprisingly filling & really tasty.

Which egg noodle brand do you use? That was a staple in our house until the supermarket discontinued them 😭 we haven’t found a replacement yet (although we must have every single brand in our house) thank you

I had some risotto leftover from the other day that I put a chunk of mozzarella into, rolled into a pattie and then in breadcrumbs and pan-fried. Had it with some salad. It was lovely, I am trying very hard to reduce my food waste at the moment, using up leftovers.

Tonight’s dinner was meh, but yesterday’s was this and I’m still thinking about it… so easy to put everything in a roasting dish and cook pasta on the stove.

Salmon fillet spread with pesto, put in the oven for 17 mins with cherry tomatoes on the vine, feta cubes, fresh basil and a drizzle of olive oil, serve with spaghetti

Chicken breast cut up .. thrown in wok with a bag of fresh Chinese stir fry veg and a chili and garlic sauce ( all from Sainsbury's). One of my favourite meals scince being on Mounjaro.

Oooh I have some gnocchi in the fridge I totally forgot about, do you just literally toss it all together with a little oil or butter? That sounds lovely! I had no idea which sauce to try with it.

I think I deserved the takeaway this week but we are in a rut having them most Fridays and sometimes they aren’t actually worth the cost, hence my search to find some more exciting options we could start adding in!

Leftover roast chicken heated up in leftover gravy. Roasted carrots, parsnips, new potatoes and sweet potatoes + boiled broccoli. Also some stuffing - which has to be Paxo! Washed down with half a bottle of rose 😬🐷

Yes I just use vegetable oil and whatever veg I have in the fridge which will roast well - onion, courgette, mushrooms, peppers, add herbs and that's it! Super easy and really tasty.
