What did you have for dinner tonight?

I fell face first into a filthy but tasty burger delivery from Deliveroo as I’m PMSing and feeling like hell.

i want to make better decisions and get out of my weekly rut, so want ideas of what you had for dinner tonight!

if you also had a takeaway then that’s cool too some solidarity will also be good for my fragile mood 😅

Prawn / Pasta thingy.

Prawns gently fried in garlic and a tbs tomato puree, add vegetable stock (cook out), add half a tub of Philadelphia and a handful of grated parmesan. Add pasta, sprinkle with chopped parsley.
15 mins and bloody delicious.

Halibut, mash and peas. Husband had a tooth extracted and we needed a “soft” meal.

That sounds amazing what does cook out mean? Is it cook until it's all dissolved or am I being stupid and you just mean you ate it outside 🙈

Yes, it's not clear is it - apologies.

I just meant gently simmer the vegetable stock for a while. Only because the first time I made it, the vegetable stock could still be tasted if you know what I mean, so I think you need to give it time, it also means it becomes slightly thicker and silkier so coats the pasta really well.

As well as being delicious, it's also really easy and quick.

Last night it was home made pork and apple burger in a bun with a cheese slice Dijon mustard and mayo served with mixed salad and corn cob.
Tonight was Egg mayo wrap with sweet gem lettuce, tomato and cucumber on the side. And a Rocky Road type thing I’d helped three year old make earlier.

Last night we had jacket potatoes with tuna and sweetcorn mayonnaise. Today we had roast gammon with a honey and wholegrain mustard glaze with boiled white cabbage, boiled carrots and roast potatoes.

My meal tonight was not inspiring I’m afraid, combination of clearing out food ahead of going on holiday, and really couldn’t be arsed so I had beans on toast. But otherwise this week I’ve had:

raw salmon with tempura veg
spiced lamb chops with Greek salad
chicken kebabs with halloumi and roasted mushrooms
butternut squash and bacon risotto
homemade smash burgers with onion rings and coleslaw

Tonight was roast chicken thigh fillets marinaded in yoghurt cinnamon cumin paprika lemon zest dried chillies and garlic with flatbread, tzatsiki, lambs lettuce, tomatoes and olives.

And I made an apricot, walnut and lavender cake to take to a family lunch tomorrow.

Monday I'm planning Undihyu - a gujarati vegetable curry with gram flour dumplings that are total yum. Recipes for it are all over the Internet if you fancy giving it a go. My recipe is from cookbook from the late great Hansa's restaurant in Leeds.

Hansa (for it was named after the wonderful woman who owned and cooked in it) should be appearing in baby name suggestion posts on Mumsnet by now (sorry I've crossed over into a completely different sub genre of post....)

Well...it wasn't the healthiest...McD fishburger, biscoff mcflurry (lovely!) then strawberries. I want another mcflurry now but they shut at 11pm.

In my defense I'm in a hotel so options are limited.

The biscoff mcflurry is amazing I had one the other day 😋
